Super Easy Chicken Chili
Wow! This was very yummy! The beans add such a great consistancy to the stew, and the cumin is a wonderful compliment. We added most of the spice quantities the recipe called for but scaled down the cayenne a bit. We added more green chilis because we had some fresh roasted Hatch and couldn't stop ourselves. It was spicy but not hot and we probably could have gone all the way with the cayenne and still been OK - the sour cream softens up the spice. The only extra I added was some fresh garlic and some salt. You will enjoy! It was delicious.

Spicy Chile Casserole
My husband told me that I hit a home run with dinner tonight - and he's a picky customer! The only thing I did differently than the original is frying the tortillas in some conola oil. It adds calories but helps them hold their texture in the casserole. They wont be crispy - but they wont be mushy either. I dabbed the extra oil from the fried tortillas with a paper towel to keep the calories down.

Plum Cake
This cake is so yummy and light. It's perfect for a summer evening. My husband LOVED it and he doesn't usually care for desserts. The only change I made was to include some brown sugar with the plum layer and I used an 8inch cake pan (I don't have a tube pan). But it still came out wonderfully. I will make this often.
