About this Cook
I'm a working mom of five. Happily married and loving my life. I love to use AllRecipes to plan out my meals for a week or two in advance so I can have dinner placed in the oven before I leave work.
My favorite things to cook
I love Mexican foods given an American twist. When I find a recipe with some of the ingredients I have on hand, I'll test my cooking know-how by altering the recipe on the fly. With practice, it becomes easier.
My favorite family cooking traditions
I love to cook the big holiday meals. It's work, but cooking during this time reminds me when the women in my family would get together a few times a year and share the kitchen. They were good memories that I want to pass to my children.
My cooking triumphs
Simply improving and not burning everything while attpempting to do two things at once! And using AllRecipes because it makes me look as if I'm really organized! I've had people mistake me at the stores for mystery shoppers and for inventory contractors because I come in with calculator and clipboard in hand! I'm triumphant about saving money because I buy everything at once and none of my grocery budget is spent buying items I can't use in a recipe. I also plan out menus. While I do switch days that I have a particular meal, my menu jogs my memory as to what I had in mind when I bought a particular ingredient.
My cooking tragedies
My attempts at a low-carb cheesecake with no sugar and very little artificial sweetners isn't going well. Because cream cheese can be very expensive, I have to keep it on my try, try, try again list until I get it down right. I did get it right once, but I didn't write down the ingredient proportions I used! Oh well, back to the chopping block! :-)

Ground Beef Shepherd's Pie
I didn't have any potatoes to put on top of this recipe, but it still came out great. Instead I used a cheese topping. I also added some leftover veggies from the fridge such as corn and peas. This had all of our proteins and vegetables in one dish! Very easy to make--simply throw it together! I suggest making enough for more than one meal, too, because it refrigerates well. The kids loved this one! :-)

Roast Beef and Cheese Roll Ups
This is a great dish to make. All of my kids loved it including the toddlers. I use pre-seasoned (Italian style) tomato sauce instead of pre-made spaghetti sauce for even less sugar and carbs in the recipe. I also make more than I need for one meal since this recipe refrigerates well. A defininte "keeper" in my recipe box. :-)

Burgundy Pork Tenderloin
I used my Dutch quart oven to cook this while running errands. This was some of the most tender meat I've ever eaten. Because my husband is counting carbs, I left out the wine, but used the veggies and added ginger. It still was very tender and flavorful.
