My favorite things to cook
Living in Texas, I love to improvise and create different Tex-Mex and southwestern foods. But, hailing originally from near KansasCity, MO., my very favorite things are usually Italian.
My favorite family cooking traditions
The Holiday season always started on Thanksgiving with us. It seemed that from Thanksgiving to Newyears, the house was filled with food. Cookies and candies of all sorts lined the breakfast bar for the entire month of December, and part of the tradition was my mom, my grandmother, and me all making them together. The smells of certain types of deserts sstill take me back there.
My cooking triumphs
My first successful creation was my Lasagna rolls. I was never on to make lasagna because of the mess in serving. Call me crazy, but I never could get it out of the pan and present it looking pretty. I made a tremendous vegetarian lasagna roll recipe that I fell in love with, and so did all of my friends and family.
My cooking tragedies
Too numerous to count, and usually involving me trying to make cajun food. Once I learn the basic recipes, I'm fine there, but inevitably I try to go out on a limb and make something new that I haven't tried before (and without a recipe). I almost always quickly discover that Cajun cooking and me don't mix without recipes.

Chicken Casserole Del Sol
This was really great. I have been recovering from surgery, so my husband has had to do all of the cooking lately... yikes. I found this recipe and thought that it would be easy for him to follow. He made it exactly according to the recipe, and it was wonderful. It was done quickly, and it tasted great. I think that I would probably add more cornflakes if I made it, and it DEFINITELY needed a larger container, but otherwise, I wouldn't change a thing. If you have conpunctions about trying it, remember, my HUSBAND made this. He DOESN'T cook, but this was easy for him. Thanks.

Mango Salsa Salmon
Very very good. I served this at a get together for my mother's birthday. I used salmon filets instead of steaks, and baked them at 375, after lightly brazing them in a pan with salt, pepper, and olive oil. They were a hit! The salsa was incredible, and not too spicy for my 81 year old grandmother. Very colorful, and pleasing to the eye as well as the pallette. My family raved. Thanks.

Best Ever Cinnamon Pull Aparts
These were good fresh out of the oven, but reheated they were not so great. I will probably try these again. A word of advise to would be bakers though, DO NOT attempt to use a loaf pan. Follow the directions and use a cake pan. I tired a lof pan, and it took 45 minutes to finish all the way through. By the time the middle was done, the top was black. I re-assert though, that fresh, these were pretty darned good. I also restate what several other reviewers said about the cinnamon and butter.
