Rich and Creamy Roasted Eggplant Soup

Loved it...no need for the cream, either. To keep it vegan, used almond milk and it was delish. Omitted the oil, too.

Low Fat Buttermilk Ranch Dressing

I used Greek low fat yogurt instead of sour cream, and Smart Balance mayo. I LOVE this salad dressing!

Easiest Mac-N-Cheese Ever!

Garbanzo Tomato Pasta Soup

Sauteed my onions and garlic in vegeta bouillon instead of using oil. My teenagers said it was the best soup ever anywhere. Will make this again...soon!

...change to 5 stars with our changes: We adjusted the baking powder to 2 tsp. and added 1-2 tsp. vanilla per other reviews. We omit the salt and oil (I do that with most recipes). We added 1/2 cup frozen raspberries and had some of our fave pancakes ever. My 10 year old son made them!!!

Greek Chicken Stew (Stifado)

I used less than 1/4 c olive oil, and increased the chicken broth to 2 cups. My 4 kids and husband all gave 2 thumbs up--a rarity in our house. Yum!!!!!
