Rich and Creamy Roasted Eggplant Soup
Loved it...no need for the cream, either. To keep it vegan, used almond milk and it was delish. Omitted the oil, too.

Low Fat Buttermilk Ranch Dressing
I used Greek low fat yogurt instead of sour cream, and Smart Balance mayo. I LOVE this salad dressing!

Easiest Mac-N-Cheese Ever!
It made enough for one person instead of six and was a little to cheesy. But otherwise was very easy to make.
