I am married and have 3 children, 2 boys and 1 girl. I love to bake and cook and am always on the lookout for easy weeknight suppers. My husband enjoys sharing lunches at work as his friends love the food.
My favorite things to cook
I love cooking everything. Our favorites are Mexican, barbecue, and seafood. I consider baking one of my hobbies and enjoy doing it.
My favorite family cooking traditions
I think Christmas at my mom's is the best. She bakes for weeks before and has a table full of Christmas candies and treats.
My cooking triumphs
After my dad's mother passed I wanted to surprise him with a Whiskey cake like his mom made every Christmas. I asked my mother for the recipe and she said no it's too hard to make. She finally gave it to me and I made it successfully and surprised my dad with it on Christmas. I shared it with my mom and to her surprise it was delicious. I make it every year now.
My cooking tragedies
I tried to make cinnamon rolls for the first time. Instead of using the recipe in the bread maker instruction book I used one from this site. All was going well until it started to rise. It began oozing out of the bread machine and was an awful sticky mess to clean up.

Peppery Shrimp and Rice
This was delicious. I made a double batch. I used less pepper flakes because of the kids(frowns) but it was still very good. Some of us sprinkled a little cayenne on while eating. I also used a wee bit less sugar. For the broth I did mostly water & a chicken boullion cube & then a little bit of red wine. I also used raw shrimp that I sauteed in a little butter & garlic. Will for sure make again. Thanks

Philly Cheesesteak Sandwich with Garlic Mayo
The garlic mayo rocks! Didn't use all the mayo though. Don't be shy w/the mayo it is really good. I used an arm chuck roast sliced thin. I also sprinkled with a little Italian season instead of Oregano. Also lightly sprinkled with season salt before baking. I also used sliced Mozz. cheese instead of shredded. Wonderful & will make again.

Beer Butt Chicken
What a fun recipe. I am an amature griller & found this to be not as scary as I thought it would be. This kind of cooking is out of my comfort zone but now I feel confident in my grilling abilities. I used 2 chickens but forgot to double the other ingredients but it still worked out great. Chick. was done in 2 hrs, almost overdone. One chicken was dry, the other semi-moist. I will decrease cooking time next time. I also tucked a little onion in the end of the chick. to keep the steam in. I used a charcoal Weber & the lid would not fit on tightly until the chick. shrunk a little(lid was resting on chick.) Will for sure make again & again!!
