Warm Crab Dip II

Yumm-o! My only complaint is that I can't stop eating it when I make it so it's only a once in awhile dish! I serve it with Xochitl tortilla chips (a fancy organic brand that tastes amazing) for a delicious gluten free appetizer.

Triple-Cheese Macaroni

This was a very good recipe! It was probably my favorite mac and cheese recipe that I've tried. I did make a couple of changes. I used gluten free macaroni because of food allergies and it worked great. I followed the same cooking instructions with the rice pasta and it worked great. I also used colby cheese instead of the mild and sharp cheddar cheeses. Neither of these changes will alter the taste much so I feel like I got a good sense for the recipe. It was very very good. I'm not a fan of the creamy processed mac & cheese recipes, I like the old fashioned kind and this is a good old fashioned recipe. Great flavor, great recipe. The only change I would make is to reduce the amount of mustard in the recipe. It gives it a great kick, but was a little too strong. Maybe a little less than a tbsp. I will definitely make this one again! I got lots of compliments!

Peanut Butter Shortbread Cookies

This recipe has been floating around awhile going by various names (flourless peanut butter cookies is one), but by any name it's delicious. It really doesn't resemble shortbread if you ask me. I tried this recipe last year when I made the switch to gluten free and my husband thought it was the most amazing thing he had ever tasted. I honestly don't know why anyone would want to add flour to peanut butter cookies after trying these. This really is the best peanut butter cookie around!

Awesome Baked Sea Scallops

I changed quite a few things when I tried this recipe, so this isn't really a review of this recipe, but more a suggestion of an alternate way to make it. I needed to make it gluten free for my family so I substituted crushed corn chex for the bread crumbs. I was really impressed; it really gave it an excellent flavor. I used bay scallops instead of sea scallops, green onions for the shallots, and I substituted butter for the olive oil. I also added a little minced fresh parsley into the crumbs. I kept the same baking instructions and served with fresh lemon (highly recommended). This was delicious! My husband wanted the scallops, which I'm not a fan of, but the breading tasted so good that I didn't even notice the scallops! Lol, that's either good or bad depending on how much you like scallops, but this variation was delicious and gluten free. Loved it!

Sweet and Spicy Baked Chicken

I thought this was really delicious and super easy! My parents make pepper jelly every year around Christmas and we always have a ton left over. I spotted this recipe and thought it was a good way to use up some of the excess. This recipe was really just supposed to be about using up what I had in the pantry and so I was pleasantly surprised when it turned out delicious. It wasn't spicy at all (although I've never found the jelly to be very spicy), it was mostly just sweet and buttery. If you are craving a spicy chicken recipe, this will not be it. It was a delicious recipe and hard to screw up. A+

Creamy Caramel Flan

Delicious! Not everyone likes the custard texture of flan. This recipe replaces it with a rich texture more similar to cheesecake. It was very easy to make, although I have to agree that it's important to warm the pan prior to pouring the sugar. I used a glass pie plate and not only did the sugar harden very quickly, it cracked my pyrex dish! It also melted the spatula. If you've never made it before, expect the sugar to get very hot! Aside from that, it was very easy to make and impressive to serve. It's also gluten free! This recipe is definitely a keeper.

Apple Crisp II

I used gluten-free all purpose flour instead of regular flour, so I'm sure mine tasted different from everyone else, but it worked very well. The only gluten free oats I could find were steel cut instead of rolled so that changed the texture a little bit, but it also added more crunch. So that's an idea if you like more crunchy topping. I'm surprised that many reviewers thought it didn't have enough crumble. I thought it had quite a lot. I like that the crust is on the bottom too. I think next time I will try a little bit of cloves or nutmeg. Very easy and good. Yum!

Banana Banana Bread

I really liked this recipe. It was easy and it had a great texture. It was a little bit springier than most banana bread. I think I will add a few extra spices next time. Maybe some vanilla and nutmeg, that was the only thing missing. It was a great start though, this is a keeper.

Easy Chicken Enchiladas

I was surprised that such an easy dish can be delicious! I really thought that it didn't have enough ingredients to be good. I think this recipe could also be modified to make crab enchiladas. I loved these!

Crackle Top Molasses Cookies

These cookies look really beautiful, but I wasn't wowed by them. They reminded me alot of snickerdoodles. I prefer a molasses cookie that is a bit spicier. I'll keep looking.

Bavarian Cream

Normally I hate it when people review recipes after they make a bunch of changes, but it just turned out so good that I decided to go ahead. I decided to try and make it more carb friendly and so I used splenda for baking instead of sugar and half and half instead of milk. I followed the rest of the directions to a T and was very impressed with the final product. The only thing is, I was expecting it to be more pudding like, and when I added the whipped cream it turned out more like, well, whipped cream. I tasted it before I added the whipped cream and it was amazing. This could be used in boston cream pie or as pudding if it is made without the whipped cream. It could be used for cream puffs or other pastries as is. My lower carb version turned out fabulous. I give this recipe an A+.

Mother's Day Pie

Delicious! and so easy. I loved this recipe, will make it a part of my repertoire. The only thing is, it's a little mushy to scoop out of a pie pan. I might cook this next time in a ramekin. Definately a keeper!
