About this Cook
I have lived all over the South, from Tennessee, Florida, Virginia, and Texas. I went to college in Villanova, PA and I met my military hubby while playing volleyball in DC! I had never really cooked before we got married so thanks to Betty Crocker and Southern Living, we are both still alive! We have lived in Hawaii and Japan. I love to read, scrapbook, play volleyball, play with my Shar-Pei, and cook for my three kids!
My favorite things to cook
I love to do a fish fry when I have a gathering. I will fry catfish, shrimp, with all the sides. Because my family is polynesian, we cook with seafood several times a week. Now that I am living on the border of Mexico, I am trying lots of traditional Mexican dishes.
My favorite family cooking traditions
The kids and I bake cookies for Santa every Christmas Eve. I let the kids pick out any cake recipe they want from the cookbooks for their birthday and we make it together! I host a cookie exchange and a progressive dinner every year.
My cooking triumphs
My first triumph was making the most delicious lemon rasberry cake for my daughter's first birthday. It had seven layers and looked as pretty as a picture!
My cooking tragedies
The classic turkey disaster! The first Thanksgiving I was married, I threw out the thermometer, left the giblets in, and hadn't properly thawed the turkey prior to cooking. Gross! It is a good thing I baked a good pie because that is what we ate!

To Die For Blueberry Muffins
I made 100 muffins for a bake sale to benefit the tsunami victims in Samoa. These blueberry muffins flew off the table! This will be my go-to recipe from here on out. The texture was perfect and the top was lovely. A++

Banana Cake VI
This was an easy, great cake. I made it exactly as it said. I had to cook it for 80 minutes. I think the next time I will just serve it plain or maybe with a bit of whip cream. The frosting was a bit too sweet. Overall, this is a great recipe and will definitely stay in my recipe box! Update: I made a mistake when I baked this cake and gave it to the Marines here. They loved it so much that I have now made three this week alone! Easy and so good!

Pumpkin Cream Cheese Muffins
I made 90 muffins to feed an army (literally) and they were a hit! I made four different kinds of muffins and while all were received with hungry appreciation, these were the ones that disappeared the fastest! Great recipe exactly as written.
