Portobello Penne Pasta Casserole
This looked and smelt delish, until I put in the soya sauce... I have to say that, event though some people swear by the soya sauce... for me, it's a definite NO. I think it's an acquired taste. I substituted the spinach for broccoli and also cut the milk down to 1 1/4 cup and added 3/4 cup of cream of mushroom soup. A little salt and pepper to taste. 1 cup of mozzerella and 1 cup of cheddar, and I also sprinkled the top with some parmesan. Without the soya, I would have given this 5 stars.... but alas, the look and taste with the soya, was a no go, for me. I can't even bring myself to eat the leftovers. That's a big N0-NO for me. So, needless to say, I was somewhat disappointed.

Baklava II
This was my 1st attempt at making baklava. I already had nuts hanging around the kitchen, so, I decided to mix the almonds with pistachios. I didn't have the 1 1/2 lbs this recipe called for, so, I used half the amount. ( 4oz almonds and 4 oz pistachios and it was enough to do 6 layers using 1/3 of a cup mixture between each ) I also put them into a coffee grinder for almost a ''coffee grind'' texture. The only other small thing I had to change was the lemon. I didn't have any fresh lemon, so, I just put a few dashes into the syrup. It's a long process, but, it was worth every minute!!!
