Roasted Chicken with Risotto and Caramelized Onions

I accidentally misread the recipe and used WAY MORE olive oil in the risotto than called for so I didn't use the butter... and I did add more rice b/c I accidentally added more chicken than what I could estimate was a pound and was trying to even it out. But even with all my mistakes, it turned out fabulous so I will have to put this in my NO-FAIL recipe category and will make again and again!

Flavor was excellent! I served it for in-laws who LOVE sauerkraut so I made adjustments for more of that and more cornstarch but this is truly a no-fail recipe...

Tom Ka Gai (Coconut Chicken Soup)

Turmeric made it a bright yellow which I wasn't expecting but it tasted pretty good. However, if there was lemongrass and galangal (curry paste) in it, it would have been five-star-perfect and out of this world. NEEDED lemongrass. *I also used peanut oil & 1 lb. chicken pieces but don't think that was a big difference at all* Stir-fried pre-packaged cole slaw (shredded red/green cabbage and carrots) in peanut oil with ground ginger, soy sauce and cooked rice and put that in soup to make it a little heartier.

WOW-this was really sweet! I am thinking maybe too sweet? I just kept thinking how much sugar that was when I doubled the recipe. I think I will use whipping cream instead of milk next time b/c I thought the consistency was very thin.

Pistachio Chocolate Chip Cookies

The flavor was good, but I should have trusted my instincts when measuring out the flour and baking powder thinking it was an awful lot. These came out the consistency of cake/muffins rather than a chewy or crunchy cookie, and were just so dry that you needed milk with them. I may try again but changing the leavening/dry ingredients for a better texture for me. Otherwise, the pistachio pudding was a great flavor twist.

Hate to be one of those reviewers who made changes and then rates it 5-stars but I bet this would've been 5-star without my addition of one 10oz. can of Sue's shredded cooked chicken breast. This is awesome and I have a stash in my work-freezer & my co-workers circle like vultures!

These remained REALLY soft--as in way too soft. Probably b/c I subbed more apples for the raisins. silly me. Just not blown away by this, but use my review for a cautionary note of what NOT to do and perhaps it will be better for you.

Classic Greek Spinach

EXCELLENT--I have made it many times, and it is surprisingly filling AND of course tasty. Didn't have to change a thing! I love making it a main course and sitting down with some flatbread and hummus and going to town!

Braciola I

Why is it so difficult to find cooking twine in Houston? With the help of some toothpicks to secure the rolled meat, this is a show-stopper! Just have to extract carefully after cooking... I was wary like another reviewer of the raisins but they added to it and I am NOT a raisin fan (used yellow and purple different times with same good results). I think that as long as you get the butcher to tenderize the meat really good--knowing you will also have to whack at it as well--and choose a yummy spaghetti sauce, this is a no-fail. If the cheese comes out or not, (sometimes it happened to me, sometimes it stayed with all), it all comes together deliciously. I have made it three times now for different groups and have gotten astonished, rave reviews. HEY!? ;)

Beef and Brew

I was so excited to make this recipe with so many favorite ingredients, but the first time I made it, I blamed the results on tough meat from the butcher. However, I made it a second time with more tenderized meat, and it was just bland. Maybe some more spices to add richness to it???
