Orange Sunshine Cake

This recipe has been a family favorite for years. I do not use pudding mix in the batter - it all goes in the frosting. Let the frosting sit for a while before topping the cake for better texture. I make two layers and slice them to make four layers in all.

Blue Ribbon Chocolate Chip Cookies

These were a big hit! I used butter flavored shortening and the cookies were delicious. I halved the recipe because I wasn't sure if the family would like them. Even with just half, I had 52 cookies using a small cookie scoop.

Lemon Drop III

This was very tasty. It's a new drink for me, and I needed a little extra sweetness for my personal taste, but the recipe does allow for that. I used simple syrup in place of sugar and it worked well. I also used yellow sugar on the rim of my glass. Thanks for a great recipe!

Salmon Cakes II

These tasted very good and were easy enough to make. The hardest part was picking the bones out of the canned salmon. I completely forgot to dust with flour before frying (darn kids distracted me), but I don't really think it was necessary. They were very good without it.

Egg-White Crepes

I made this recipe to use up some frozen fruit and whole wheat flour I had on hand. They were very tasty, and easy to make. Take this hint for making the crepes - do not attempt to flip the crepes until they look almost done on top. I doubled the fruit for this recipe and let it sit with a little sugar on top before using. Topped it with whipped cream and these were delicious!

Chunky Monkey Pancakes

Spicy Baked Sweet Potato Fries

I'm giving this four stars for taste. I really liked the taste of these fries (I used Taco Seasoning I from this site). I baked these at 400 for 15 minutes and then 425 for 10 minutes. I had to take them out at that point because they were starting to burn. As a result, hardly any of the fries were crispy - only the skinniest ones got crispy on the slightly burnt ends. I can't imagine how these would have turned out if I'd baked them according to the original recipe, though I'm certain they'd have been crispy.

Hoe Cakes

I thought these were very tasty - excellent with chili! They are incredibly simple to make. My recommendation is to let the batter sit for several minutes before dropping onto the hot griddle. It thickens up a bit when it sits. Thanks for a keeper!

Giant Chocolate Chip Cookie

I made this recipe for my son's 9th birthday (and allowed him to decorate it himself.) I ended up cutting it down to fit into a container I'd saved from a purchased cake. I have to state that this is really NOT an original recipe, but is the exact recipe on the Nestles semi-sweet chocolate chips bag.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are absolutely wonderful - better than any I've had in any mall! I only got 15 cookies when I used a 1/4 cup scoop (level) and had to bake them almost 20 minutes. They were a huge hit!

Chocolate Peanut Butter Cups

I made these as a Valentine's Day treat for my hubby and oldest son. They are enjoying them, but both say they're almost too rich. I don't eat them myself (this was a true labor of love as I don't like peanut butter in the slightest), so this rating is based on their reviews. They weren't difficult to make, but were a little time consuming. I had filling left over, so I melted more chips and made PB patties with it. I also topped the cups with chocolate hearts (semi-sweet) that I had left over from another project.

Spaghetti Carbonara II

This was a very good recipe. I halved the recipe, but otherwise made it almost exactly as stated. The only change I made was to add a splash of whole milk with the eggs. DH asked me to make it again - five stars!
