Big Soft Ginger Cookies

An old family favorite - I've been making these cookies for ages and they're always a hit! I make a double batch, keep the dough in the fridge and have fresh cookies all the time.

Easy Slow Cooker French Dip

This was very good. I followed the recipe exactly, but found the meat to be, actually, a bit dry until dipped into the juices. The flavor was very good. I do wonder about the serving size, though. That's a LOT of meat for the number of servings. I will make this again, but with a smaller roast. There will still be plenty for everyone.

Pastry Cream

Stuffed Strawberries

These were delicious! I threw in some orange zest and grated German sweet chocolate over the top. I used low fat cream cheese as it's all I had on hand. That worked well, but the next time (and there WILL be a next time!) I will refrigerate the filling before piping it into the strawberries. When the filling is room temperature, it tends to "squish" out of the berry as it's piped in. Refrigerating would allow the filling to firm up, so more filling can be piped into the berries. Yum!

Blueberry Sour Cream Pound Cake With Lemon Glaze

I made this last night and followed the recipe exactly as written. This is one of the best pound cake recipes I've ever come across. I made a lemon glaze with 1/4 cup lemon juice, 1 1/2 cup powdered sugar, and some lemon zest. I poured this over part of the cake. It added a nice tangy bite. The cake was wonderful with and without the glaze. I will definitely make this again. Note: I did have to bake the cake approximately 80 minutes.

Asparagus Potato Soup

Cake Balls

Honestly, I'm not sure what all the fuss is about with this recipe. These are an incredible pain to make. I don't mind a challenge in the kitchen, but this just isn't worth the effort. The taste is good, but not fantastic. And the amount of chocolate coating called for doesn't cover even 1/2 of the cake balls. I won't make these again.

French Toast Casserole

This is a tasty recipe. Because my family likes drier French toast, I added an extra cup of bread and cut the milk back somewhat. I actually liked the casserole better after it sat and cooled for a while.

Divine Hard-Boiled Eggs

This is the perfect way to make hard-boiled eggs. I have used this same method for years. It results in perfectly cooked eggs without the yucky green ring you can sometimes see.

These were very good, but I had to add a good bit of extra flour to make the dough workable. As written, the dough was very soft. I added about 1/2 cup of extra flour.

Chocaroon Cake

This is delicious - even better than the Bundt cake mixes I remember. I do recommend using a stand mixer for this recipe. This batter is extremely because of the pudding mix. I used Satiny Chocolate Glaze from this site as a topping. Amazing!

Ricotta Gnocchi

This rating is for the gnocchi only. I did not make the sauce, but used a marinara I already had on hand. I followed the recipe to a "T". I had to add a good bit of extra flour to make the dough workable. I'm thinking two LARGE eggs may be too much moisture. But the recipe did state to add flour as needed, and that worked out well. The gnocchi were delicious, and I will definitely make them again.

Crispy Rosemary Chicken and Fries

This recipe was delicious. The chicken was very moist. I used a combination ob thighs and breasts (which I cut in half with my trusty meat cleaver so they would cook through). I used fingerling potatoes (had them on hand and needed to use) and left them whole. I used 3 cloves of grated fresh garlic that I mixed with the oil before coating the chicken and taters. The chicken skin was not terribly crispy. I will make this again, but may boost the heat for the last 15 minutes after basting and removing the grease. Thanks for a great recipe!

Banana Oatmeal Cookies

I halved the recipe and added a pinch of salt to the dry ingredients to bring out flavors. Otherwise I followed the recipe to a T and was very pleased with the results. These are delicious and a great was to use up those very VERY ripe bananas.

Grandmother's Buttermilk Cornbread

This is my new favorite cornbread recipe. It's so easy to make and is just sweet enough without being too sweet. One tip I can offer - when I added the dry ingredients, I gradually whisked in the cornmeal first, then sifted the flour and salt into the pan as I stirred. I had no lumps to deal with and the result was divine! Thanks for a keeper!

Fluffy Carrot Muffins with Cream Cheese Frosting

This recipe is delicious exactly as written. I finely grated the carrots. The only slight change I made was to skimp on the oil (I only had 2/3 cup left and didn't open another bottle). The muffins are delicious, moist and not too heavy. The frosting is a nice touch. I held some back, colored it orange and green and piped little carrots on top to "fancy' them up. I got 15 nice sized muffins. Thanks for a recipe I will definitely make again!
