Corn Tortilla Chips

Italian Bread Using a Bread Machine

This is a good recipe, but it seems flawed in a way. Moving the loaves from a cutting board to the baking sheet seems like an extra step and causes the bread to fall a bit. My bread turned out a little on the dense side. Next time I will let it rise on the baking sheets.

Tomato Tossed Salad

This is an incredibly basic salad recipe and is a good starter. You could easily add a lot of other ingredients to suit your tastes and make it your own. I prefer to keep dressing on the side, as any leftovers get pretty soggy sitting in the dressing.

Oatmeal-Currant Scones

I honestly had no idea what to expect from scones. Despite having jumped the pond twice when I was younger, I never once tasted a scone, but always wanted to. The end result of this recipe was a batch of tender, tasty scones. I did have to modify the recipe, however. Made as stated, the dough would be impossible to form into a ball. It's far too soft, more like a batter. I added enough flour to make a soft dough, then formed it into two balls instead of one. I followed the directions from there, but did have to increase the baking time. If I make these again, I will form the dough into 4 balls and flatten to 3/4 inch or so to make smaller scones. Mine were quite large. They were a hit at work, served up with strawberry jam.

Creamy Au Gratin Potatoes

Delicious potatoes. I grated the onion, as I have a family member who doesn't like to find it in anything, but otherwise followed the recipe almost exactly. I was roasting meat at a different temperature, and since I lost the argument over installing double ovens when our home was built, I had to adjust the cooking time accordingly.

Pan-Fried Asparagus

I agree that the directions are a little off here. You absolutely have to start the asparagus first and add the garlic later, or you risk burnt garlic. The heat is too high and garlic burns quickly. Tasty recipe, but only if you prepare it differently than written.

Italian Cookies I

These are not an overly sweet cookie, but are very good. I made them for my son to take to an Italian themed celebration at school (you know, "Mom, I need to take something for the party TOMORROW.") The kids devoured them. What puzzles me is that every other picture submitted shows round cookies. The recipe does say to form the dough into walnut-sized balls, but it then says to roll it out and form it into a loop. Did anyone else notice this? Seems they all stopped before the final step.

Pasta with Asparagus

Great flavor, but the pasta dried out quickly after plating. This occurred despite adding additional chicken broth and lifting the pasta directly from the water into the pan to toss before transferring to the serving bowl.)

Pan Seared Lemon Tilapia with Parmesan Pasta

This was a very good recipe. I followed it almost exactly, except the cilantro. It's not something I keep on hand. next time I might try penne pasta instead of macaroni. I think it would lend itself better to the dish. Thanks for a great recipe.

Cinnamon Streusel Orange Muffins

I loved the combination of orange and cinnamon in these muffins. I used fresh-squeezed OJ. Delicious as-is, but I just might add the zest of an orange next time for even more flavor! Thanks for a great recipe!

Calico Bean Casserole

I've actually been making this recipe for about 20 years. It's very versatile. You can substitute different beans (keep the baked beans, though). I leave out the onions - picky eaters here. Delicious!

Four Cheese Macaroni

My nine-year old went back for seconds. Need I say more (well, if you knew my kids you'd understand that this alone makes this a 5 star recipe!) I used shredded colby-jack cheese and heavy cream since I had no half & half. What's a few thousand more calories? Delicious!

Almond Citrus Biscotti

This is my new favorite biscotti recipe! I followed the recipe almost exactly. My only tiny exception was the pinch of lime zest I added. It's marvelous - very refreshing. The recipe is very easy. I suggest wetting your hands while forming the "logs" as the dough is slightly sticky. I also used parchment paper as I do with all my cookies. Mine did bake to a very light golden brown in color. These will not get very dark. Thanks for a real winner!

Monkey Bread V

Five stars for taste and simplicity! This was so easy to make. I didn't need to wet the kitchen shears when cutting the biscuits as suggested. They didn't stick at all. I did put the ingredients together slightly differently, though. I put some of the biscuits into a bowl, tossed them with some melted margarine, then tossed some cinnamon and sugar mixture on top and mixed. I did this several times until all the biscuit pieces were coated and in the pan. I did not top with melted butter, since it was already "in there". I topped with cream cheese icing.

Big Soft Ginger Cookies
