Beer Butt Chicken

I've used this method for years with wonderful results. My chicken is generally done in about 1 1/2 hours rather than the 3 stated. I always stuff a small potato or onion into the neck opening and close the skin with toothpicks. This keeps the moisture inside the chicken. Delicious!

Orange Lemonade

I followed the recipe exactly using fresh-squeezed orange and lemon juices. As written this recipe is just too sweet. It is not really lemonade, since there is so much orange juice and very little lemon juice to speak of. If I make this again I will cut down on the sugar and increase the lemon juice.

Peach Amaretto Upside-Down Cake

This was delicious and very easy to make. I used frozen (thawed and drained) peaches. The house smelled AMAZING while it was baking (mine took 30 min). I actually let mine sit longer than 10 minutes before plating it. Thanks for a great recipe sueb! I will definitely be making this again!

Isaiah's Pretzel Fried Chicken

I used one large chicken breast that I cut into chunks. After breading, I deep fried the nuggets for 4 minutes at 350 F. I originally chose this recipe because I had some very slightly stale pretzels to use up. It's definitely a keeper! I've already had to share it.

Berry-Filled Doughnuts

So quick and easy! I filled these with Bavarian cream and dipped in chocolate ganache. Wonderful way to get quick, tasty doughnuts. I'd like to try apple pie filling with cinnamon/powdered sugar on top. This recipe can be very versatile - just use your imagination!

Vegetable Wild Rice

I halved this recipe and used fresh thyme and rosemary since I'm growing both. I did have to adjust the liquid and cooking time since the rice I was using was a blend. I love the combination of flavors this recipe offers! A real keeper! Thanks!

Hudson's Baked Tilapia with Dill Sauce

I halved this recipe and just dusted the fillets with the cajun seasoning (I skipped the S&P. I loved the way the fresh dill sauce cut the spice of the fish. Delicious! I will definitely use this one again and again!

Simple Cajun Seasoning

I needed cajun seasoning for a recipe and whipped this up in no time at all! I loved it as is, but it's very spicy (it IS CAJUN sesoning, after all). The nice thing about making your own is you can control and spice/salt in the seasoning!

Easy Passion Fruit Mousse

I made this recipe exactly as stated. It sounded very good in theory, and it was incredibly easy. But it really is so very sickeningly sweet that I couldn't eat it. I tried using some fresh blueberries - their tartness helped a tiny bit, but I could only eat a few mouthfuls. The puree, or pulp, that people are substituting isn't available in my area, but then that's not what the recipe calls for.

BBQ Teriyaki Pork Kabobs

These were delicious! I marinated for about 6 hours and basted with the extra sauce. I made the sauce as stated, except I grated fresh ginger into the marinade instead of using ground ginger. I will definitely be making these again!

Ranch Pretzels and Goldfish

I was having a party and needed something fun, tasty, and crunchy - NOT ordinary chips and pretzels. I happened to have all the ingredients on hand for this recipe. I only made half a batch (small party), but the result was wonderful! This was incredibly quick and easy to make. Unfortunately it's also a bit addictive. I can't stop eating the leftovers!

Ron's Grilled Shrimp

I used fresh-squeezed lemon and lime juice. The basil and parsley came straight from my garden, but I only had dried cilantro. I'll admit I didn't measure the ingredients carefully, mainly because I was cutting back the recipe to use what precious few shrimp I had. I marinated about two hours and grilled in a grill wok. These were delicious! I will definitely make them again.

Fried Mac and Cheese Balls

We really enjoyed these! I fried them for 4 minutes and they were cooked through. The only problem I had was that the egg froze quickly before the crumbs could stick after the initial dip. I had to dip and roll twice, but that worked out great. I froze the entire batch (uncoated), then used half the egg and crumbs to coat half the batch. I'll make the rest in a day or two (or an hour or two). Since I have leftover pimento cheese spread, I may make another batch and keep them frozen. From freezer to fryer is pretty quick. Thanks for submitting this recipe, Erin! It will be enjoyed again and again!

Crispy Potato Pancakes

These were very good. They could use a little bit more seasoning for my taste, but they turned out well. I did put the grated potatoes in cold water to keep them from turning color. I drained well, pressing them into a mesh colander to remove the water, then added the seasonings.

Teriyaki Marinade with Ginger and Garlic

I used this marinade on sirloin steak kebabs. I marinated about 8 or 9 hours. I did pulverize the pepper flakes a bit before adding to the mixture to bring out the heat a little. I loved the result. I will definitely make these again!

Pretty Chicken Marinade

I made this with regular soy sauce and Dijon mustard. I also marinated my chicken for over 8 hours. The result was delicious - some of the tenderest, juiciest chicken I've ever had. I didn't find it overly salty. It may actually depend on the BRAND of soy sauce you are using. This recipe will definitely stay on my "chicken list". Thanks!

Never-Ever-Fail Meringue

This recipe worked very well for me. I did not have a problem with shrinking or weeping - a first. I did have to increase the baking time to 20 minutes and the meringue was still very light brown.
