ZUQUICHE It Is!

Well, without having to wait until tomorrow, I can see that choice #2, Zuquiche, is the winner. Zuquichey was first suggested by Petey, then Zuquiche was suggested by Sue. Thanks to all who suggested recipe titles and/or voted - it was a lot of fun! Some people mentioned wanting to try the recipe, so here it is! Feel free to copy it, or save this blog as a web link to your recipe box. I am going to submit it, but we all know about AR's famous recipe purgatory/limbo. Some escape and some do not! Enjoy - let me know if you like it!

ZUQUICHE

2 cups shredded zucchini

½ teaspoon salt   

1 clove garlic, minced

2 green onions, diced

½ cup diced red pepper

½ cup flour

¼ teaspoon salt

¼ teaspoon ground black pepper

½ teaspoon baking powder

one egg, lightly beaten

½ cup milk (I use 2%)

2 TBSP melted butter

1 cup shredded mozzarella cheese

Preheat oven to 375 degrees F.

Spray an 8 X 8 glass baking dish with cooking spray.

Place shredded zucchini in a medium bowl and sprinkle with ½ teaspoon salt.

Let it sit for about 15 minutes to allow the zucchini to release its juices.

Then strain/squeeze it to get out the liquid. You want it as dry as possible.

(I've gotten up to 3/4 cup liquid out of mine)

I used a mixing bowl to press it into the strainer.

In a large bowl, whisk together flour, baking powder, pepper, and ¼ tsp salt.

In a separate bowl, mix together egg, milk, and butter.

Stir egg mixture into dry mixture just until blended.

Fold in veggies and cheese and mix gently just until incorporated.

Spread in greased baking dish and bake 30-40 minutes until top is lightly browned and toothpick inserted into center comes out clean. Moist zucchini may add cooking time.

Allow to cool about 10 minutes before serving.

It looks great, will have to get a nice zucchini at the farmer's stand on Weds and try it out! I just joined all recipes and have been exploring the site a bit more than the usual raiding when I need a certain kind of recipe! Hope you get it posted and wonder why it takes so long!

we're gonna take a 2 day zucchini fast and then we are makin it! (we been eating zukes for weeks now!)

I can't believe I didn't see this until now - sounds delicious! I love zucchini, and quiche - great combo. I know what you mean about draining them; I have to do that for my zucchini meatloaf. I strain, drain, squeeze, and press the resulting patty between layers of paper towels to get even more out; I swear, those things are juicier than watermelons! I definitely plan to make this; a friend promised me a whole pile of zukes, yum! Good luck; I hope they publish it!

RECIPE REVIEW: I really enjoyed this recipe. I made exactly as stated with the exception of using a small loaf pan because I didn't have an 8X8 baking dish. As is, its a great and easy side dish that I'm sure I will make again and again. Thanks Pam for such a lovely recipe. Hopefully AR will speed up the recipe submission process so I can leave this on your recipe.

thanks for the recipe my two sons and my mum in law.in laws love it very much.im not fan of cooking cakes but when i try your recipe i get to love to cook more please can you send me more cakes recipes,im leaving here in the middle east(bahrain)and we have food festival on 20 ohf this month..and im really in need of your help(desserts is must)please..take care and GOD BLESS YOU ALWAYS..more power...

RECIPE REVIEW II: This was our brunch main dish last weekend. I had to make a few changes because I had no butter. I followed as written but subbed 1/4 cup of 1/2&1/2 and an extra egg and I added 1/8 tsp cayenne. My family loved it. Submit this - it is a winner!

About Me 
I have three sons, ages 13, 12, and 9, who are very picky eaters (especially the middle one). Their favorite meal is a bowl of buttered pasta. I try to cook things that they might enjoy trying, but they're not always willing to try new things. My oldest is getting better. He actually eats real food much of the time now! I love to try all sorts of new recipes, so I don't really have a favorite thing to cook. I go in phases, really. I've been doing more cupcake and cake decorating lately. I'll try almost anything if I think my family will eat it.
My favorite family cooking traditions
I love making the pumpkin pies and other desserts for Thanksgiving. I always like to try one new dessert for each holiday. Baking Christmas cookies is a tradition that goes back as long as I can remember.
My cooking triumphs
I've made some pretty cool cakes for my boys' birthdays. They include a firetruck, baseball, football, and Pokeball. I've also used shaped pans to decorate everything from Barney and Elmo, Power Ranger, Jeff Gordon's #24 racecar, a dog and dog house, and most recently, a monkey and a penguin. One of my best triumphs has been teaching my boys to cook. They'll never go hungry.
My cooking tragedies
The first time I cooked a turkey I relied on my thermometer to tell when it was done. It wasn't.
