This dish is so tasty - something you would order at a very good restaurant. I followed the recipe almost exactly with superb results. And so easy! The soba noodles I found (had to go to a Korean grocery) called for cooking only 30 seconds, so I ended up over-cooking mine, but they still tasted great. The buckwheat flavor goes perfectly with the peppers and tomatoes ... add in the scallops, and wowsa! Highly recommended - I will make it again, and probably for company.

Thought this recipe was fantastic! Following other users' suggestions, I added thinly sliced zucchini and cherry tomatoes plus a dash of balsamic vinegar to the roasted vegetables; and I used goat cheese instead of parmesan. WOW! What a flavor combination. Something about the sweetness of the roast vegetables with the salty of the pizza crust with the gooey cheesiness of the goat cheese. A definite keeper! Oh, and the 4 minute boil of the butternut squash worked perfectly.

The nice thing about this recipe for me was that I already had everything - or I thought I did - ended up having to use feta cheese and a little milk and butter instead of cream cheese, and it still turned out quite good. Would definitely make it again, it seems like a go-to recipe and was very easy.
