Golden Rum Cake
Deeee-licious. I made this for a party and everyone loved it. Many people had seconds. The only change I made was to include only a splash of rum in the glaze. I used appleton rum in both the batter and the glaze. I made the cake two days before the party and stored it in the fridge in a cake tupperware. I already put this recipe in my recipe book.

Spanish Flan
Absolutely delicious! I didn't change a thing on the recipe. I made two flans for about 20 people and everyone loved it. This is going to be my main flan recipe from now on. I have tried many other recipes, from Cuban cookbooks and web sites, but this one tops them all. I used dark cake pans because it was all I had on hand and it came out PERFECT. Just remember that the sugar takes a long, long time to melt, especially if you don't have a powerful stove. Try this recipe -- you'll love it!

Apricot Pork Chops
This was really yummy. I made some modifications, using 2 pork chops: 1/3 cup apricot and pineapple preserves; 3 oz tomato sauce; and 1 tbsp onion powder. After I mixed and poured the sauce on the pork chops, I added one dollop of the apricot and pineapple preserves on top of the pork chops. It turned out delicious - both my husband and I loved it. This recipe is going in my recipe book!
