Mexican Rice II
Yes, this is authentic. I've been making spanish rice for more than 20 years and this is how it is done. I would only suggest that you cut the liquid down to 1 3/4 cup if you are using tomato sauce.
Also, for a once skillet dinner, you can arrange chicken pieces, or diced pork chops over rice after you add the liquid. Do not open the pan until 20 minutes have passed. Serve with fresh or refried beans and hot tortillas. mmmmmm.....
