Pumpkin Pancakes
These pancakes made the whole house smell wonderful, but the batter was a bit heavy. I thinned it out and had a wonderful breakfast. Remember to oil your pan, as they are low in fat and tended to stick to my nonstick griddle.

Mexican Rice II
Yes, this is authentic. I've been making spanish rice for more than 20 years and this is how it is done. I would only suggest that you cut the liquid down to 1 3/4 cup if you are using tomato sauce. Also, for a once skillet dinner, you can arrange chicken pieces, or diced pork chops over rice after you add the liquid. Do not open the pan until 20 minutes have passed. Serve with fresh or refried beans and hot tortillas. mmmmmm.....

Navy Bean Soup I
I made this for the teen group at church. The theme was "Living Simply so that others can Simply live". After tasting this, I'm not sure it fits the theme, it so SO GOOD! I tripled the recipe, and used canned chicken broth. I also added carrots for color and used rotel tomatoes. Instead of ham (which would get pricy) I used some turkey sausage I had on hand. It was great! Just a hint that my dear grandmother gave me: Don't cook the beans in the same liquid you soak them in and you will gut down on the gassy side effect of bean soups...
