Spicy Chicken Soup

This recipe has the added benefit of being healthy. I used the hot variety of diced tomatoes (Rotel brand) and my wife and I both enjoyed the flavor. If you don't like food spicy, go for the regular diced with green chile peppers, or maybe even leave out the chile peppers. This soup recipe should be in the regular rotation for those interested in eating a lean and healthy diet.

Easy Chili I

Though this recipe is indeed "easy," it is not as flavorful as many other chili recipes I have had, some of which are available at the allrecipes website. It was fine, just not as memorable as others.

Drunken Dogs

As other reviewers have indicated, if you want any thickness to the sauce, you must add corn starch. I cooked the dogs on high in my slow cooker for at least two hours, maybe three, and the sauce still had not thickened, so I broke down and added the corn starch. I used the big Fairbury Brand dogs, the kind sold at Nebraska games, which are easily the best mass produced dogs around. I used a bottle of Blue Moon, which provided a exceptionally rich taste experience.

Ginger and Rosemary Pork Marinade

My wife really enjoyed this one. It has a citrus like flavor which works really well with pork. I worried that the cayenne pepper, left to marinade for many hours, may make the meat too spicy hot. Turns out, it was fine. In fact, I might add more cayenne pepper next time I try this; we could barely taste that ingredient.

Easy Cajun Grilled Veggies

No doubt, the ingredients in this recipe can easily be substituted with other veggies, and that's what I did; I used what I had on hand. Sweet onions, red peppers, and fresh mushrooms. I look forward to trying this with zucchinis and yellow squash down the road. The olive oil mixture is a spectacular idea. I used a grilling wok to grill the veggies on the backyard grill, despite temp in the 30s. I had some marinated veggies delivered to my room in Vegas and have been looking for a recipe reminiscent of that. Thanks Kelly, and allrecipes.

Cheesy Mushroom and Broccoli Casserole

Cheddar Ranch Dip

So few ingredients, yet so full of flavor. For appearances sake, save some shreds of cheese, a few bacon bits, and maybe some chopped green onion as a garnish for the dip. I prepared this for a family Christmas gathering and it was awesome.

Sausage Stuffing

Yeah, this one is a definite keeper. The flavor is as good as any dressing I have ever had. I prepared mine in a slow cooker. Since I doubled the recipe, until the bread compacted, it barely fit into my large slow cooker. That's okay, as the stuffing cooks, it will shrink, giving you a little space at the top to stir the ingredients. As another reviewer suggested, I used turkey drippings to enhance the flavor and help the dressing maintain the right consistency (not dry out). I started the dressing on high, but lowered it to low, and then warm once we started eating. Cooking this in the slow cooker allows one to prepare the dressing far in advance. When on high, if you give it time between stirrings, the dressing forms a nice little crust where the bottom and side walls meet, which will be pleasing to any diners that enjoy a little crunch in the dressing. What a great recipe. This one rocks. An easy five stars!

Creamy Parmesan Mashed Potatoes

Inexplicably, I forgot to use chicken broth. Presumably because the potatoes did not have salt infusion from the broth, I had to add salt while mixing. As I tasted the potatoes, it was clear they did not have enough salt. Don't knock yourself out searching for Neufchatel Cheese; it's just a low-fat version of cream cheese and if you are not particularly concerned about calories, regular cream cheese will work just fine. I finally found Neufchatel Cheese in the dairy case next to the other cream cheese products. I had difficulty finding it. Store employees seemed baffled when I ask about it, as if they had never heard of it. I doubled the recipe and it was great.

Special Turkey Gravy

Despite the simplicity of this recipe, it turns out a gravy which is lump free, rich, golden brown in appearance, and most importantly, delicious. I was skeptical that a recipe with so few ingredients would be worthwhile, but not to worry, it was excellent in every regard. If you are using drippings from the pan, I recommend straining the drippings into another bowl to get rid of any meat, vegetables or foreign matter that may be in the roasting pan. This will produce a smoother gravy. Finally, I was in a hurry so I combined all of the ingredients while they were at room temperature and whisked before placing on the stove and it worked fine, causing no lumps whatsoever.

Perfect Turkey

I combined this recipe with the recipe called "Turkey Brine" here on the allrecipes website, and it was delicious. I used the portion of this recipe to fill the turkey cavity to enhance the flavor of the turkey from the inside. I also used the white wine suggested in this recipe, which was a great idea.

Turkey Brine

I doubled this recipe because I had a huge turkey and wanted to make sure that I had enough to fully immerse the turkey in the brine. I used a storage box, but purchased a big food safe plastic bag, and put the brine, including the iced water, in the plastic bag, and set it in the box, which had a secured lid. Then, I put the whole thing on the deck on a below freezing night and the brine did not freeze. This worked very well, though I was initially concerned that the the brine may not all fit in the bag. Be careful when removing the turkey. The bottom of the bag busted as I removed the turkey and I had a real mess on my hands. The turkey flavor was moist and delicious. Turning such a huge turkey is NOT easy. I actually tore the turkey a bit when turning it because the meat was so tender.

Baked Penne with Italian Sausage

I rated this recipe three stars, but my wife indicated it was more than three stars. To me, it was garden variety pasta; the 1/2 cup of wine didn't seem to add much to the flavor. I must leave open the possibility that I wasn't as hungry as my wife, tasting the sauce along the way to try to pump it up a little. I did add a little basil and salt. As it was, the sauce seemed a little flat. Since my wife ranked it highly, I'm giving the recipe the benefit of the doubt with four stars and will try it again sometime.

Tex-Mex Turkey Soup

Very good, a great way to use up leftover turkey, though this recipe would be good with chicken too. Giving this soup a Tex-Mex spin was brilliant, quite an improvement from another turkey sandwich.

Cranberry Glop

I'm not sure what "glop" means, but it doesn't sound particularly appetizing. To the contrary, this dessert dish *is* very good. It's similar to apple crisp, but because of the tartness of the cranberries, it's has a bit of a sweet and sour vibe. The chopped pecans make it pop. Another reviewer suggested adding dashes of cinnamon on top, which would probably be a nice embellishment. We served it with French Vanilla ice cream, which was great. Whipped topping or a Cool Whip type product would also be good. After it cools, you can warm individual servings up in the microwave for 45 seconds or so for just the right warm up time.

Cheese Onion Garlic Bread

Okay, this is recipe is restaurant worthy, just spectacular. I used a loaf of Italian bread, which was great. I do not want to know how many calories are in each slice, but if calories are not an issue with you, if you really want to cut loose and try something different than standard garlic bread, this is the one!

Never Enough Green Bean Casserole

This was pretty good, but for a reason I can't really identify, had a slightly bitter aftertaste. Was it the processed cheese or the store brand beans? I'm not sure. The store brand beans I bought had another problem in that the stems were not all cut off of the beans. Next time, I'll buy a premium brand. Please note that the volume of this casserole is quite small. If you have more than four people to feed or wish to have leftovers, it makes sense to double this recipe.

Martha's Hot Almond Spread

This is the appetizer you want when you are trying to come up with something "different." It comes out in such large glops that you may wish to double the recipe. I will the next time I make it. Down the road, I will experiment with dried cranberries or diced bacon, as others have suggested. The flavor, though wonderful, is not pronounced. Adding these other ingredients may elevate the flavor another notch or two.

Roasted Asparagus With Thyme

This is a really solid side dish. The flavor of the asparagus is embellished without extinguishing it. Preparation is a piece of cake. I will probably try this with balsamic vinegar at some point, which would probably be delicious.
