Golden Au Gratin Potatoes

Reviewed: Dec. 23, 2009
How can you go wrong with these ingredients. I made as written except I had to use real onions as I ran out of the dried ones. I diced them very small and they were fine. I also had no cornflakes so used some French's Fried onion topping. Yum.

Creamed Chicken for Biscuits

Reviewed: Dec. 23, 2009
This was tasty. I used half and half to cut out some fat and it still was good. I used 1 large can of chicken as that was the quickest and I had no peas so I cut up some frozen green beans and used them for the veggie. It was quick and easy. I had leftover biscuits that were perfect.

Ultimate Twice Baked Potatoes

Reviewed: May 23, 2009
These were great. I left a bit of the flesh in each shell and that helped. They did get a bit dry and I had to add more milk which I think is because my potatoes were huge. But good combination of flavors.

Kalua Pig in a Slow Cooker

Reviewed: Apr. 25, 2009
This seemed like it would take way too long. I cooked it as described but only for 12 hours as the smell was way too enticing for my family to resist any longer. It was excellent. I did use the hawaiian sea salt. I had a lot left over so will have several meals ahead. I froze the leftovers. This is good meat.

Actually Delicious Turkey Burgers

Reviewed: Mar. 11, 2009
I cut this in half and embellished it a bit with the worcestshire sauce and soy sauce splashes. I also used seasoned salt instead of regular. These were wonderful. Didn't want to waste the egg so I used the whole thing. I added them to a cold grill pan and they did not fall apart nor were they dry.

YUM YUM!!!! I loved this sauce on the asparagus. Can't wait to try it on another vegetable. Probably green beans. I made it a written and it was good.

Cajun Cake

Reviewed: Mar. 6, 2009
This was just fair. But to be honest I could not add 1/2 pound of butter to it. That seemed like way too much. I cut it in half. It was all eaten at work and everyone said it was good. I thought it was a bit dry but maybe that was because I didn't add all the butter. I used the brown sugar in the topping too. Don't know if I will make this one again.

Quick and Easy Chicken Noodle Soup

We loved this chicken soup. I added more chicken because I had it and used thing egg noodles as that is what I had at home. I did add 2 cloves of garlic to the sauted vegetables. It was so good.

Downeast Maine Pumpkin Bread

Reviewed: Dec. 17, 2008
I always make breads that get dried out. Not this one. It was so moist that I was shocked. I made as written but added the 1 tsp of vanilla as others said and used a genorous tsp of cinnamon. It was excellent. It did take 65 minutes to bake. Thank you for sharing.

Cranberry Bars

Reviewed: Nov. 24, 2008
These were excellent. My family couldn't say enough good things about them. I did cool the cranberry mixture for about an hour until it was like a jelly. I spread the dough in the pan with my hands and really packed it down. Then I spread the cranberry mixture almost to the edge of the dough. I topped it with some white chocolate chips then the rest of the dough. I did as others said and cooled them for 3 hours on the counter. They were very easy to cut and take out of the pan. I will definitely be making these often as we love cranberries.

Broiled Tilapia Parmesan

Reviewed: Oct. 29, 2008
This was very good. I did cut the topping in half for 1 pound of fish. I added paprika and garlic powder also. Just a shake of each. I also added the bread crumbs and that made a nice crunch. But if I had not been watching closely the crumbs would have burned. Will definitely do this one again.

Crescent Mummy Dogs

These were cute but hard to wrap the dough. It got sticky and fell off a lot. My grandchildren loved them so that is what counts anyway. I used a toothpick dipped in mustard to make the face. It was perfect that way.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 21, 2008
This had the perfect amount of spice for us. I put the chicken in frozen and it turned out great when I shredded it. I will add black beans next time. I served it with cilantro, lime wedges, sour cream, cheese and chips. It was so good. I can't wait to make it again.

Zesty Slow Cooker Chicken Barbecue

I really liked this. I used Sweet Baby Ray's sweet and sassy. It had the perfect bite and the family loved it. I made extra and froze it for later after I shredded it up. We ate the breasts whole and really enjoyed them. Can't wait for the leftovers.

Mini Meatloaves

Reviewed: Sep. 25, 2008
These were quite good just as written. They cooked quickly and looked very nice with the bright red topping. Will definitely make these again. They did not even fall apart like my meatloaf usually does. I had no leftovers so that was the only bad thing. I will double next time for my family.

BBQ NY Strip

This is a wonderful marinade for steak. The flavor is outstanding. I love steak plain usually but tried this and the family and our guests loved it. It was in the marinade for about 5 hours and that was plenty. Also left them at room temperature before grilling for 30 minutes. So yummy!!

Roasted Cajun Potatoes

These were a hit at dinner. They are not spicy at all and next time I will add more spice to them. And I can't even tolerate too spicy food. Everyone wanted the recipe for these. Made exactly as stated.

Hot Fudge Ice Cream Bar Dessert

Reviewed: Aug. 31, 2008
How could this not be great. I did use Dove chocolate sauce for the canned stuff and it made it quite smooth and fudge like. I put the chocolate mix down before the whip cream as it was too thick to spread on the cream. It won't last long in my freezer.

Classic Cuban Midnight (Medianoche) Sandwich

Reviewed: Aug. 20, 2008
My family loved this even though I had to make some adjustments to use what I had on hand at the moment. I had to use Havarti cheese and hamburger buns. But after grilling them on a grill pan and pressing them with my cast iron skillet you couldn't tell it was a bun. It just tasted wonderful. I only made half of the sauce and it was plenty. This is a good quick meal.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Reviewed: Aug. 18, 2008
This was very good. I followed the recipe with no changes. It was devoured by my family. Not too spicy so if you like it hot add something to it. We grilled it and it was moist and just plain wonderful.
