Cola Pot Roast II

I made this exactly as written, except thickened the gravy with a little cornstarch after removing the roast. The meat wasn't dry at all. My boyfriend said to give it "5 1/2 stars, especially the gravy."

Cuban Midnight Sandwich

Authentic or not, this is a great sandwich. I agree that there was a surplus of the mayo mixture. I'll cut it in half the next time. I used a heavy cast iron skillet as a sandwich press ~ it worked like a charm.

Best Spanish Rice

I wasn't expecting too much from this recipe, but I was pleasantly surprised! The kids loved it and it goes well with Mexican food. Be sure to use a quality salsa though, in order to avoid that spaghetti sauce/canned flavor you can get from some of the lower quality salsas.

Monte Cristo Sandwich

I made these for lunch and they were well received, as well as quick and easy to prepare. I like them without the jam, the boys like them with it. As a previous reviewer stated: Be sure to dip the sandwiches quickly; if you let them soak up too much of the egg/milk mixture, they get a bit soggy.

Coconut Cream Pie I

I used a prepared graham crumb crust and it went realy well with the filling. Being a working mom with a teenager, a toddler, and a newborn, I'm a big fan of any recipe that saves me time and still tastes great.

Best Green Bean Casserole

This is now one of the dishes I prepare for potluck dinners. I steamed frozen French-style green beans instead of the canned variety (I seriously cannot stand canned vegetables), and it turned out great. I mixed about a third of the French fried onions into the green bean mixture and sprinkled the rest on top. A great way to get my veggie-hater of a hubby to eat something besides meat and pasta! :)
