Big Soft Ginger Cookies

Delicious! I had pressed them down rather flat to avoid the gooey middle that others posted. They still spread further and I ened up with a BIG cookie. Next time, may use the medium scoop instead of the big scoop to portion out the dough. I will drizzle with vanilla icing for a pretty presentation. Thank you!

Whipped Sweet Potato Casserole

Yum! Delicious without being too sweet like traditional sweet potato casseroles. The OJ was perfect. Just a tip on "peeling" potatoes...cut potato in half, boil for 20 minutes then squeeze potato out of skin, magic!

Vanilla Glaze

Made to go with the Two Ingredient Pumpkin Cake from this site. An excellent glaze for any cake! Use 1 tablespoon butter, 2 tablespoons of milkand 1/2 teaspoon of vanilla (or almond extract depending on what you are using this on). You can really play with the consistency by using more or less milk. If you mix with a handmixer, you can end up with a fluffier consistency and is also great as an actual frositng.

Baklava

Wow! DELICIOUS! I took the suggestions of others and made the sauce first then allowed to cool in the fridge before pouring it over the baklava right out of the oven. I didn't believe it could be that good with so few ingredients, boy was I wrong. Even my husband was in awe when he tried a small bite that I was willing to give up. The rest waits for Thanksgivings guests (hold me back!)

Flourless Peanut Butter Cookies

Like other reviewers, I added 1 teaspoon of vanilla. These were made for a co-worker with gluten intolerance and everyone in the office liked them. I made them bite sized using a Pampered Chef small scoop, rolled in balls and flattened with the bottom of a glass, then make an impression with the fork. Great alternative!

Corn Casserole III

I begged a neighbor for her "scalloped corn" recipe. This is the one except the neighbor's calls for 1/4 cup butter instead of 1/2 cup. Draining the whole kernel corn makes the casserole more firm, closer to corn bread. Next time, I will reserve at least 1/2 of the liquid to get the scalloped consistency. Using low fat sour cream worked too. Either way, it was a hit at my house.

Whole Wheat and Honey Pizza Dough

Best pizza crust I've ever made. I will not try another...this is the one. I prebaked for 15 minutes and then made the Four Cheese Margherita Pizza from this site. Fantastic!

Four Cheese Margherita Pizza

DELICIOUS! I didn't have fontina so I replaced it with additional mozzarella. I used the Whole Wheat and Honey Pizza Dough recipe from this site (prebake for 15 minutes before topping). We have never made a better pizza at home than this. For those who commented on a soggy pizza make sure your tomatoes are roma. They are more firm and "meaty" with less water. Also make sure you are brushing on the marinade and not pouring the whole thing on. You should have marinade left over.

Two Ingredient Pumpkin Cake

A huge hit at the office! This always goes quickly. Even a co-worker who dislikes pumpkin asked for the recipe. I do add 1 egg, use fresh pumpkin when available, then frost using the "Vanilla Glaze" recipe from this site. So far, I've made with spice cake, carrot cake and devil's food cake with a touch of cinnamon. Thank you!

Easy Guacamole

Great for Guac lovers! Very similar to the Best Guacamole recipe on this site, but this one uses lime instead of lemon, adds tomato and garlic which I like. If you like guac, you won't be disappointed. If avacados are in season and you want to try it out, go for it!

Marshmallow Fondant

This is my first attempt at fondant. All things considered,I think it went very well. I followed the highly rated review using a jar of marshmallow fluff. My fondant covered a Barbie cake for my daughter's birthday. She was tickled pink.

Decorator Frosting

Initially, I wondered about the amount of butter, but this whipped up nicely and was an excellent compliment to the cut out sugar cookies I frosted. Like others stated, it dries nicely so you can stack cookies but yet they are still soft when eaten. I added a 1/2 teaspoon of almond extract. Delicious and rich.

Oaty Cereal Bars

Yum! I used Cheerios, natural peanut butter, reduced the sugar slightly, added 3/4 cup oats (both quick or old fashioned will work) and 1/2 cup dried cranberries. I continued to boil the sugar/honey mixture for 30 seconds after it came to a full boil and got a nice bar that stays together without being candy hard. Do not boil the honey/sugar mixture for up to 5 minutes. Doing so creates the "rock hard" and "break your tooth" oaty cereal bars referred to in other reviews.

Rhubarb Bread I

Excellent! I have frozen some of my rhubarb and look forward to making this for the holidays. I used applesauce in place of the oil. Add 1/2 tsp cinnamon to the batter and included enough flour in the topping to make it crumbly. I made 1 regular sized loaf and 3 smaller loaves. Freezes well too.

Eggplant Croquettes

When I brought eggplant home from a co-worker's garden, I was met with a big grimace. I'm not big on veggies either, but I was determined to give this a try. To mash the microwaved eggplant, I used a hand blender leaving some chunks for texture then baked them on a shiny baking sheet at 350 for 30 minutes, turning over half way through. This recipe reminds me of a vegetarian crab cake and has helped us find a way to eat more veggies. Thank you for an original recipe!

Speedy Ice Cream

A great activity to do with the kids! I used 2% milk, so really I have ice milk. I also used rock salt and a large rubbermaid container to contain the ice/salt. No need to crush the ice. After 6 minutes, we have a good solid ice cream. As others suggested, be sure to rinse the ice/salt off the ice cream bag before opening. We've had a great time experimenting with flavors. Besides adding candy and cookies, we've tried...1 tsp vanilla, 1 tsp cocoa powder, small chunks natural peanut butter, chopped Reeses Pieces (chocolate PB delight)...1/2 tsp vanilla, 1/2 tsp peppermint, semisweet mini chocolate chips, green food coloring (mint chocolate chip)...1/2 tsp vanilla, 1/2 tsp cinnamon flavoring, 1 tsp cocoa powder (chocolate cinnamon). Need to try instant coffee granules next!

Chinese Chicken Fried Rice II

Great recipe for leftover chicken. I use brown rice and make it the night before. First, I saute the onion, then scramble the egg with it and add the remaining ingredients. Just make sure to have them all at the stove...it goes quick. An easy recipe to half if you choose, still using 1 egg.

Strawberry Jam

A great recipe to use my strawberries that were a little past ripe. Unfortunately, I couldn't get it boiling quite hot enough on my portable induction unit (trying to conserve heat in the summer) so it didn't set up very well. This is not the fault of the recipe! It still tasted great, and will be excellent over ice cream. I look forward to trying again on the electric stove.

Zucchini Brownies

Made these for the office and they were a hit. Followed the recipe to a "T". I used my KitchenAid to mix it all together. When I added the zucchini last, the consistency became completely moist and easy to spread in the pan. Next time, I may substitute 1/4 cup of applesauce for 1/4 cup oil. Delicious!

Cake Mix Cookies VIII

A quick and convenient cookie recipe when you want cookies fast! I used only 1 egg and added 1 tsp of vanilla. Instead of adding the suggested oil (more fat and calories), I melted the margarine in the microwave for 1 minute at 50% power. It mixed up great. Then drop by teaspoon fulls onto the baking sheet and flattened slightly with the bottom of a glass coated in sugar. I used a yellow mix with chocolate chips. They were ok. Chocolate Fudge with peanut butter chips were outstanding. Lemon with no chips were like lemon sugar cookies. Next is spice mix with added oats and white chocolate chips, then strawberry with white chocolate chips.
