The first two times I made this, it came out 5-star delicious. The third time I made it, I decided to make it the day before, as others suggested. Don't make it ahead unless you absolutely have to. It's not near as good. There were three things I didn't like when doing it this way. 1) Because you're starting with a cold pie, the cheese started to get too brown on top without it getting completely heated through the middle. 2) I did not like the texture of the tortillas as well. 3) The bottom tortillas stuck.

I made muffins with this recipe. We didn't like the taste or the texture. We like a sweeter cornbread. It was bland and rubbery. The paper wouldn't peel away without pulling clumps of muffin with it. Maybe it had to do with the brand of ingredients I used.
