Make-Ahead Mashed Potatoes

Made these to contribute to Thanksgiving Dinner for 18. I enjoyed these -- No one else commented one way or the other. I am more of a traditionalist, and will stick to mashed potatoes with butter and milk. Also, no matter how I've made mashed potatoes for a crowd, they are always "Make-Ahead" -- either the day before or the morning of. This dish was flavorful, but not worth the additional cost or calories.

Pumpkin Bread IV

My son and father (both pumpkin lovers) said this bread was very good. I am not a pumpkin "lover". I will comment that it was full of pumpkin flavor -- just a bit too sweet for my liking. Perhaps the addition of walnuts would counter the sweetness. Will make again, if requested.

Tilapia with Creamy Sauce

Loved the fish. I didn't have lemon-pepper, so it was omitted. Plus there was lemon juice in the recipe so I just added some black pepper, along with dill. I spritzed the fillets with "I Can't Believe It's Not Butter" since my Pam was not butter-flavored, and drizzled with melted margarine and lemon juice before baking. I made the accompanying sauce, but did not serve it. I did not like it at all (used half the lemon as suggested). Instead, I quickly made a simple tartar sauce, and dinner was delicious. Served with brown rice and fresh spinach.

Grilled Salmon I

I omitted the lemon pepper, and used olive oil in place of vegetable oil. This was very good, and oh so easy! I couldn't give it the full five since my husband claims he favors the way I usually prepare it. But this will become our #1 "grilled" recipe. (As opposed to the oven recipe I use.)

Breaded Chicken Fingers

Searched for a recipe to use left-over buttermilk after making Irish Soda bread yesterday. Made these tonight. Didn't love them, as I hoped I would based on reviews. Just as well, as they are hardly low-fat. One of these days I will learn to stick with the tried and true.

Whole-Wheat Chocolate Chip Cookies

I hesitated to write a review after tasting these when they first came out of the oven because, honestly, they didn't live up to my expectations, and thought I would not be making these again. I am glad I hesitated. Upon trying these the next day, I deemed them "worthy". They are thick and chewy and rich, and better the next day! Kids devoured them too.

Baked Chicken on the Grill

In fairness, I think I need to try this one again. I also used Bisquick, but I think it could have used more spices. I wasn't sure what "seasoned salt" was, but after researching, I made my own. Next time I will go heavier on the spices. Also, I have a gas grill - so perhaps something was lost vs. charcoal.
