Baked Oatmeal I

Not bad...mine was kind of dry. I'm wondering if it would be different if I let it sit overnight (I cooked it right away - we were in a hurry). I'll try it again for sure.

Sunflower Cheese Ball

This was really tasty. I might have used a little more Dijon and garlic powder...I made it the first time and didn't have the sunflower kernels. I bought some at the store and rolled the leftover in them - MUCH better. It really complimented the cheese and made it look prettier too.

Fruit Dip VI

Excellent! Better than the fruit dip you get at the store...and easy and cheaper. I thinned it out with just a teeny bit of milk, and it was delicious. Especially good on strawberries!

Pineapple-Raisin Muffins

These were actually pretty good. I liked the crunch of the Rice Krispies with the pineapple in there. My neighbor thought they were awesome. I probably wouldn't make them again, but they were a good way to use up some old cereal. :)

Blueberry Spread

I doubled the recipe and it never really set well. So it was more of a blueberry sauce than a spread. But it went well on pancakes.

Fresh Tomato Sauce

I used this as a base recipe and I only gave it three stars because I cooked mine for at least 2 hours...30 minutes just doesn't seem like enough time to get the liquid out of the tomatoes. The more you cook it, the more the flavors meld. So I'd increase the cooking time by quite a bit.

Eggplant Parmesan II

Excellent - so easy to make and I don't find eggplant easy to prepare. I thought this was really good. I'll make it again with some homemade sauce and fresh mozzarella and that will make it 10 stars.

Black Bean Hummus

I gave this four stars - it's a good recipe, pretty good tasting and easy to make. I served it at a party last night and everyone felt it was missing something. If I were to make it again, I think I might toss some sun-dried tomatoes in there. Still, a good recipe. Thanks!

These were pretty good - I substituted Raisin Bran (no Grapenuts) and as I'm reviewing it, it occurred to me that I didn't put in the vegetable oil - but they were still good. Not the best, but that could be my changes...I'll try them again.
