About this Cook
Fun and friendly and always ready for a dinner party or soiree! I grew up in Raleigh and Cary and have lived in the area most of my life. I'm married to a wonderful guy who also cooks, and I work for NC State University as an instructional designer. I'm also a graduate student at NCSU in Adult and Higher Education.
My favorite things to cook
Anything Southern! Collards, turnip greens, deviled eggs, mashed potatoes, hopping john, potato salad, barbecue pork, dirty rice--you name it!
My favorite family cooking traditions
I loved Sunday dinners at my great grandma's because she cooked everyone's favorite dish--so we could choose from meatloaf, turkey or roast beef, as well as macaroni and cheese, boiled or mashed potatoes! She was a wonderful woman who made all her dishes with love.
My cooking triumphs
The New Year's Day feast I cook for family and friends every year. I believe it sets us up for a year of staying in touch!

Eggnog Cheesecake III
This was easy and delicious. It received great reviews from my friends and family! I used the food processor and everything turned out well--but it split as it was cooling. I hated to do it, but I spread coolwhip on it so it would cover the huge crack, then ground a little fresh nutmeg on top. The coolwhip was barely noticeable and it was a lovely dessert.

Easy Chocolate Chip Pound Cake
This is a great cake, but I make it a little differently. I substitute 3/4 cup of strong coffee for the water and add 3/4 cups chopped pecans. It is always a hit, and so moist.

Marinated Baked Pork Chops
I cut back on the oil and used 1/2 tbs. sesame oil and 1/2 tbs. vegetable oil. I also added two garlic cloves and a big dash of cayenne pepper. I added all the sauce upfront, too. I baked the chops for a total of 45 minutes. Great recipe for a quick dinner--I had everything in the cabinet. Would probably be good in the slow cooker, too.
