Authentic Enchiladas Verdes
the salsa is AWESOME. I had never cooked corn tortilla enchiladas before so the whole dipping in oil thing got me at first. Once I got the hang of it, it was super easy. I'm doing the sauce again today because now I'm craving it to go with some carnitas I have cooking. Great sauce!!!

Chocolate Pecan Tassies
Thought they were pretty easy to make, although the crust could have used more oomph. My husband couldn't get enough. Made two batches over Thanksgiving weekend and we ended up having dessert one evening with slightly sweetened whipped cream. We just dipped them in and yum!
