Yam Smoothie

I made half the recipe and used a small 15 oz can of yams, drained. My son loved it and my daughter thought is was ok. (She thought it should have been sweeter.)I liked it, I think it would also be good with a can of candied yams or with cinnamon and other spices. Thanks for a yummy recipe!

Hot Sausage Dip

This was a very good recipe. I made this on the spur of the moment, so I didn't have all the ingredients on hand. I substituted the tomato/chilis for salsa and didn't have red peppers on hand. Still turned our yummy!

Quiche Lorraine I

This was pretty good. I used a regular store bought pie shell and used only 1 1/2 cups cream, but it was still too much and I had to throw out some of the mixture. I would suggest using only 1 cup cream, because after cooking for an extra 15 minutes it was still very softish. I sauted my onions in my bacon grease, because they are better put in cooked than raw. Other than that I followed the recipe. Definately let it cool for 10 minutes or longer before cutting it.

Cream of Pumpkin Curry Soup

only ok. The only thing I did different was to use 3 cups chicken broth and a tad more salt. I was able to eat mine with chopped chives and sour crean on top. No one else in my family liked it. I thought it had to much curry flavor and my husband thought it had too much pumpkin (squash) flavor. I know it wasn't my cup of tea (although I ate mine) when I didn't want seconds.

Boudreaux's Zydeco Stomp Gumbo

This was very good. I boiled the chicken so it would be easy to shred. I used about 3 cups chicken, 1 1/2 lbs shrimp, and almost 1 lb of anduille sausage. I only used 3 (14 oz) can chicken broth. and 1 chopped red chili. For spices I used 1/8 cup OlD Bay and 1/8 cup Tony's creole spices.

Hawaii Twist

Too much pineapple juice. I doubled the coconut milk and could still barely taste the coconut. I also like a thicker drink so I added ice. I will also add yogurt next time to make it more smoothie like.

Cucumber and Tomato Salad

Very refreshing. While I was cutting the basil, my husband walked into the kitchen and said it smelled like summer. I subbed a 4oz block of feta for the tofu, and used greek dressing. It was yummy. My husband added some canned chicken to his, for more protein. It would also be good without the beans.

Hawaiian Waffles with Pineapple and Coconut

These we good. I used canned crushed pineapple. I added 1 tsp of coconut extract, I only had 1/2 cup sourcream so I added 1/2 cup vanilla yogurt to make a full cup. My batter seemed a little thick (but not bad) so I added a little extra coconut milk. We ate these topped with whipped cream and syrup, and sliced bananas on the side. I like the other persons suggestion of adding chopped macadamia nuts to the batter, it woiuld probably be good.

Lemon Poppy Seed Muffins I

These were pretty good. I doubled the yogurt and used only 2 TBSP poppy seeds. At first I thought the topping was odd, but it wasn't bad. My picky daughter said she thought it would be better without the topping (as she was finishing her fourth one during breakfast.) They were good cold, straight from the fridge in the morning for breakfast.

Popcorn Salad

Actually better than I thought it would be. I liked it, although ,my picky kids didn't want anything to do with it after tasting it. My husband liked it but wouldn't eat much of it, because of it's fat content. I would make this for a potluck or bbq in place of potato or macaroni salad.

Winter Solstice Soup

This was only ok. I ate my bowl full, but no one else in my family ate more than a taste. For some reason it didn't strike me as one I want to make again. Maybe it had too many onions or I didn't like the thyme. But it is a very inexpesive soup and probably very adaptable.

Chocolate Cavity Maker Cake

Very good cake, even for me (I'm not a fan of chocolate.) I used strong coffee instead of liquor and mini semi-sweet chocolate chips. I also floured my bundt pan and no flour was on the outside of my cake after cooking. I did frost with chocolate frosting, because my daughter wanted a chocolate on chocolate cake for her birthday. It was a hit for her.

Jumbo Fluffy Walnut Apple Muffins

Another delicious muffin. I omitted the top as I was in a hurry to get them into the oven. I diced my apples and used pecans (because I had then on hand.) I also made 12 regular muffins and baked then for 20 minutes. Great cold the next morning for breakfast.

Chicken Enchilada Soup III

WOW. Even my 12 year old who likes hardly anything, likes this soup. Changes I made: I used all chicken broth, I doubled the onion, I accidently added two cups of enchilada sauce, and I didn't have any cumin on hand-so I omitted it. But tasted great anyways.

Corn Casserole II

I liked this recipe although no one else in my family did. My six year old son thought it was too cheesy, and my 11 year daughter just made a face after tasting it and wouldn't eat it. My husband ate it, but it didn't WOW him. I did make some substitutions. I was afraid of the peppers since every one else mentioned how hot it was so I used green chilis instead, because they are milder. I also added salt and pepper. It was good. It was even good the next day with cooked onions, garlic, and steak added to it.

Scottish Oat Scones

Like these. My 6 year old son wouldn't eat them, because he saysthey are made with DRY oatmeal. Mine came out pretty dry, by I am still hopeful for the recipe. I think maybe adding in applesauce for half the butter and cooking a few minutes less might help moisten them. Just a guess! I also added in a little cinnamon.
