About this Cook
I'm married and we have two great kids who are very active in competitive sports (basketball, hockey, soccer)! My cooking goal is to create fast, nutritious meals that that the whole family enjoys. We sit down to dinner every night as a family, no matter what the rest of the evening holds (usually running in multiple directions!)
My favorite things to cook
I love to bake! When I have free time, you'll find me in the kitchen with a glass of wine and my favorite jazz station on the radio whipping something up! I also love to try new dinner recipes on the hubby and kids. They're good sports about trying new things!
My favorite family cooking traditions
My cooking traditions centre around the holidays. I bake for every family family holiday. Crowd favorites are pumpkin pie, bake sale lemon bars and carrot cake with cream cheese frosting.
My cooking triumphs
To me a cooking triumph is when people rave about my creation and ask for the recipe. There is no greater compliment!
My cooking tragedies
The first year my husband and I were married, I hosted a dinner party with our close friends. I decided to make a dish that I'd never tried before (first mistake) I started preparing the recipe before completely reading the ingredients (second mistake) I did not have half of the ingredients needed for the sauce so I ran to the store to get what I needed, with the meat in the oven (third mistake) Unfortunately, I got a flat tire on the way home from the store and by the time I got home (1/2 hour before my guest were due to arrive), the chicken in the oven was completely ruined! So my first dinner party was take out!

Ruth's Grandma's Pie Crust
Yep, this one is great!!!! My previous pastry recipe is now retired after trying this one. I love that this makes either a double plus a single crust or 3 single crusts. Makes it MUCH easier for all the baking that I do. Make sure you chill your bowl (stainless works best) and pastry cutter bofore making the recipe. 15 minutes inthe freezer will do.

Downeast Maine Pumpkin Bread
Hmmmm....I modified based on some other reviewer's recommendations. Used 3/4 cup unsweetened applesauce, 1/4 cup oil, used 1 cup white sugar and 1 cup brown sugar. I also used 2 cups white flour and 1 1/2 cups wheat flour. I also doubled the spices...End result? The bread was nice and moist but this was still a little too sweet for me. I'd certainly make this again but would drop the white sugar altogether and use 1 1/2 cups brown sugar. Might add a splash of vanilla too.....

Classic Peanut Butter Cookies
followed a few reviewer's advise and added 1/2 cup extra peanut butter....I also usd salted butter so I did not add the extra in the recipe. I also used creamy peanut butter instead of chunky. Baked for 10 minutes for chewy cookies...delicious!!!! :o)
