Strawberry Trifle

Very good! Another very forgiving recipe. Always well received. I used some mixed berries as well as the bananas & Strawberries. Decorated it with Kiwi and Strawberries. I made a change on half of the whipped topping by mixing it with the remaining vanilla pudding and adding about 1/3 cup sweetened condensed milk. Yummy!

Five Minute Ice Cream

This is a wonderful recipe as written. No need to change anything although I agree with others that it would be "Fun" to try other things or types of fruit for variation. I think that for anyone who does not have an ice cream maker or time it will be just terrific! Thank you Pamela for sharing it.

Pasta Salad with Homemade Dressing

I followed the recipe with the exception of two items I didn't have; the cucumber and mustard seed. I used some mustard powder instead. I thought the dressing was very good. One recommendation I have is to make this the day before you plan on serving and to double the dressing. The pasta did absorb the taste better by the next day but it was dry. I also would add more salt & pepper. It tasted a little bland. I added halved cherry tomatoes to mine. It was very good. Just need a little tweaking.

Simple Syrup

OOPS, I almost forgot to rate this. I was so glad to find a recipe for it here when I needed it. I was making the Mango Sorbet recipe on this site and I had no simple syrup. Funny thing is that I hadn't even heard of it before so I'm basing my rating on the convenience since I have nothing to compare it to as well as reviews made by others who know what simple syrup is.

Excellent flavor. Easy to make. In fact, my kids helped! I did let it marinade longer than for hours due to being at work but I think that if anything that only made it better!

Cajun Chicken

Oh my Gosh! I wished I had found this recipe a lot sooner. It was quick and so good. My guests loved it. The blend of spices were great. The only thing I changed on this one was to use about 1 1/4 cups of oil only and I also added juice of 1 lemon. Outstanding!

Missy's Candied Walnut Gorgonzola Salad

This salad is super easy and yet everything goes very well together. I used Pecans instead of walnuts because I was out of walnuts. I also added halved grape tomatoes. As for the dressing I used a white Balsamic Vinaigrette. Delicious!

Pumpkin Bread

I would have to agree with other reviewers who have said that the taste was excellent but it turned out crumbly. The house did smell wonderful as it was baking and we were all drooling. LOL! I used 2 cups of granulated sugar and 1 cup of dark brown sugar. I think I may try decreasing the baking powder just a tad and the ground cloves maybe. It is a great recipe. It just need some minor adjustments.

Teriyaki Pork Kabobs

I never thought of making Pork Kabobs because I had a misconception that it would turn out tough. This recipe went to prove that I was wrong to think that way. The taste was excellent. It marinated for about about 6 hours. Dinner had gotten delayed. The only thing is that the pieces of meat were smaller than 1 1/4 in. and unfortunately DH burned it a bit. I will definitely make this one again and use bigger cuts of Pork.

Chili-Lime Chicken Kabobs

We'll be having this one frequently at our house. It was excellent. I made just a few changes. I added a little Cajun spice and about 2 tbs. of Lawry's "Havana Garlic & Lime" marinade only because I accidentally added more cayenne than I meant to and since my youngest doesn't like things too spicy I had to tone it down a little. It marinated for about 4 hours in the fridge. I used mushrooms, green & red peppers and red onion with it. I realized too late that I should have grilled the veggies and the meat separately because they cook at different times and my veggies burned a little. I paired it with Mexican Corn and an Orzo Salad.

Mexican Corn on the Cob (Elote)

This was a delicious way to dress up grilled corn on the cob! I didn't have cotija cheese so I freshly grated some Parmesan cheese instead. I was pleasantly surprised that I didn't mind the mayonnaise at all. But after making it as written I will probably skip the butter next time due to the unnecessary extra calories. Thank you for posting this recipe!

Chili Rellenos Casserole

I'm adding this one to my most requested recipe list. I took it to a potluck at work and my co-workers loved it. I made a few changes based on the reviews I read. I used fresh fire roasted Poblano and Anaheim Peppers, also added an extra egg, left out the tomato paste and used green enchilada sauce instead. As for the cheese I used what I had in hand. Colby cheese. It was truly excellent.

Easy Mexican Casserole

This was just average of a casserole to me. But I took it to a potluck at work and it was well received. I used a packet of taco seasoning as well. I thought the broken tortilla chips did not add a lot to the dish. However, it was easy to put together.

Best Spanish Rice

I fried some minced garlic and also about 3 tbs. of green bell pepper with the onion. This was an easy recipe but I thought it laked flavor. Maybe some chili powder, salt and pepper would go well.

Blueberry Oat Waffles

Great recipe. I made it as written with frozen blueberries. The oats and pecans add a nice texture to the waffles. I would add a 1/2 tsp. of vanilla next time. It yielded 3 waffles.
