Texas Caviar I

I used mixed color bell peppers (red, orange, yellow and green) since I was also using them for Fajitas and had bought the mixed peppers. That with the other colors made it beautiful. As always I used some salt, a little cajun spice and a dash of hot sauce because the jalapenos alone at first didn't seem to make it hot enough. Well, good thing we like it hot. As it sat the next couple of days in the fridge it got even better and hotter. So good. I'd come home from work and just have some with chips! A real treat!

Rich Chocolate Truffle Pie

The pie set beautifully but it was very sweet and rich. Served for a large group I can see every last morsel being gone but not for us.

Crispy Rosemary Chicken and Fries

If I make this again and use chicken thighs I'll revise my review. However, I used chicken breast and overall the dish tasted bland to me. I used a generous amount of all the spices and then some. The potatoes tasted great but my boneless, skinless chicken breast....not so much. I'm trying to make healthier dishes. I did put the chicken about 30 minutes later. It wasn't dry... just lacked in flavor still.

Grandma VanDoren's White Bread

This is an amazing recipe! I first tried to make it in my bread machine. Somehow it wasn't mixing properly once I added the additional 4 cups of flour so I decided to go ahead and do it by hand. It rose beautifully and it was so light and wonderful. I made it as written and wouldn't change a thing. The taste was great too. Thanks Marilyn!

Ultimate Party Meatballs

I made my own meatballs using 2 lbs. ground beef, 1/2 cup freshly grated parmesan cheese, 2 cups Italian seasoned bread crumbs, 2 extra large eggs, salt, pepper, and ground dry parsley. I just incorporate all of it and make balls, spray a cookie tray with Pam and bake at 325 for about 25 minutes, put all in my slow cooker and add this amazing sauce, doubled off course. So good!

Rice with Almonds and Raisins

I really liked this recipe. I love just about most rice dishes but love those that have more flavor and this one delivers that. The only change I made (I just couldn't help myself) is that I added about 3 cloves of crushed garlic and saute that with the onions since that is what I do with my rice. It was just natural to me. The kids were not a big fan but I was.

Grandmother's Buttermilk Cornbread

Very good. This uses less buttermilk, cornmeal and more flour than my regular recipe but we love sweet cornbread and this made hubby happy too. I tell everyone who hasn't tried yet that they are missing out on a great thing if they haven't made cornbread on a cast iron skillet yet. It forms a great crust at the bottom and it is heaven. If you do, melt some of the butter in your skillet in the oven, after melted, carefully remove skillet and turn to coat well before adding the butter.

Plain Caramel Apples

My youngest daughter wanted to make these and I helped her out. She only made a slight mistake and didn't stir as often as she should have. The bauble that forms is still a mystery to me. Not sure why it did. But over all we enjoyed them.

Passion Bars

This is a rich but excellent dessert. Three things that I love wrapped into one delicious bar. The combination of oatmeal, peanut butter and chocolate chips was great. Took to work to share and was well received and as usual... requests for the recipe. I would suggest to use a fresh can of Sweetened condensed milk because it can get even thicker if you have had it a while. I also added about 1/2 tsp. vanilla to the milk/peanut butter mix. I also used my fingers to help spread it on top of the pressed mix. Everyone raved and that is why it gets a 5 star. Not just the consensus of one or a few. Thanks for sharing this recipe Sue!

Chocolate Chip Pumpkin Cookies

Although my kids like these, I personally thought they were very bland. I added an extra 1/2 spoon of cinnamon, instead of a pinch I used 1/2 tsp freshly ground nutmeg, but the end result was still not what I'd like. I didn't have walnuts so I didn't use any. They more cake like, as some have mentioned.

Sweet, Sticky and Spicy Chicken

This is an amazing recipe. I've made it twice already. One of those recipes that you wish you had know about long ago. By far one of my favorites from this site. I liked that it was fast and easy. I would suggest to double the sauce. I reduced the hot sauce the second time because the 1st time it was too spicy for my youngest daughter. Yet she still liked it so much that she asked me to make it again with less hot sauce. I also would recommend that you let it continue to cook because the sauce will thicken if you let it cook long enough. If you don't have the time or patience then you can thicken it with just a tad of cornstarch dissolved in water. We just serve this with steamed rice. Easy and satisfying. In our opinion Restaurant quality. No left overs either time. Thank you Kate!

Thai Green Curry Chicken

This was excellent. I stuck to recipe but added just a tad more ginger. The ginger adds so much as well as the fish sauce. In order to have great results with this dish you HAVE to make sure to use good, authentic and quality ingredients. It was gone so fast! Just a little spicy but if you are used to green curry you already knew that. Superb. Thanks Laus.

Sopapilla Cheesecake Pie

Pretty funny when you hear a loud "OMG" from someone who just had one of these and being called the Devil because you made them. Lol! Baked Ziti with Sausage

We really liked this recipe. I added an extra egg. Like others, I browned the sausage, out of their casings and then added the onion and garlic to the sausage instead of the ricotta mixture. I also seasoned the sausage a bit with salt, freshly grated pepper and oregano. Great results all around.

Strawberry Angel Food Dessert

Dump Cake V

Once again I was looking for a simple dessert. Something to make with ingredients I had on hand. I came across this recipe and decided to try it. It was very easy and it hit the spot. The only change I made was to use chopped pecans instead of walnuts.

I never get tired to share this recipe with my friends. It is amazingly easy. I usually cut down on the amount of butter and sugar. I used part white and part brown sugar as well.
