Chicken and Spinach Alfredo Lasagna

This is a very unique twist on traditional lasagna! I changed the recipe only to make a healthier version! I used fresh baby spinach, reduced fat cream of mushroom soup, half and half instead of heavy cream, and reduced fat cheeses. I also used an Italian flavored local store bought roasted chicken. I will definitely make this recipe again for my family!

Best Chocolate Chip Cookies

This is best ever chocolate chip cookie dough recipe I have found yet! I used 1/2 cup light brown sugar and 1/2 cup of dark brown sugar. I also used Wilbur(local in my area) semi-sweet chocolate chips and omitted the nuts. I even used this base cookie dough recipe for my M&M chip cookies, and my white chocolate and cranberry chip cookies! This one is a definitely a keeper!

Four Egg Yellow Cake

This was the best homemade yellow cake I have ever had! It was moist and flavorful. I did use 1/2 cup of butter and 1/2 cup of butter flavor Crisco instead of shortening. I frosted the cake with a butterscotch frosting and it tasted just like the Tastykake Butterscotch Krimpets I had when I was a kid!

Hot Cocoa Mix in a Jar

This is to die for hot cocoa, it really tastes like something from a gourmet coffee/chocolate shop! I made gift jars for Christmas and called it snowman soup! I used Coffee-Mate's creamy chocolate powdered creamer, and Wilbur Chocolate's cocoa powder (because I live right outside of Lititz, PA)! I would suggest that you sift the powdered sugar and cocoa to break up the lumps for a nice powdery consistency. In addition to the hot cocoa mix, I added a few Wilbur Chocolate Buds, and Hershey Hugs kisses, mini marshmallows, and peppermint sticks to stir it all up! The presentation was adorable!

Dog Treats I

I made these treats for Christmas gift baggies for all my puppies friends! It is a perfect healthy treat for those of us who like to make sure our dogs don't eat a lot of pre-packaged artificial treats. I followed another reviewers advice and used Peanut Butter instead of the bouillon and cheese because my dog just loves peanut butter! He almost does backflips to get one of these!

Hot Crab Dip

This recipe was just what I was looking for to make a Crab and Jack Cheese topped pretzel! I followed another reviewers tip and added a tablespoon of horseradish and a tsp. of minced garlic. I then used the crab mixture to top a large Philly style soft pretzel and topped it with a shredded cheddar jack cheese mixture and baked for 20 minutes! Serve with a sweet/spicy dipping mustard, oh my gosh...this is truly to die for!

Apple Butter Pumpkin Pie

My family voted that this was the best pumpkin pie they have ever tasted! I made it with a gingersnap cookie crust and it turned out perfect. I also added in a little ginger along with the cinnamon and nutmeg. I personally loved the streusel topping!

Pesto Cheesy Chicken Rolls

I made this for a very romantic dinner, and it was perfect! It didn't take a lot of time to prepare, but tasted better than something you would get at a gourmet restaurant. I made rice pilaf, and roasted asparagus with it...and as a perfect compliment, I served it with a light Chardonnay!

Tortellini, Steak, and Caesar

This is a wonderful week night meal, it is very simple and quick to throw together. This is a salad even the guys will like to eat as a meal! I used a light Caesar dressing (Ken's Steak House...my favorite), and fat free Caesar style croutons.

Carmel Pretzel Nut Popcorn

This really reminded me of Cracker Jacks...only better!!! I plan on taking it to my next tailgating party. I didn't change a thing...just make sure you have a big pot or bowl to coat everything well.

White Chocolate and Cranberry Cookies

I found this recipe by accident, and I am so glad that I did. It's a wonderfully unique holiday cookie! Nice twist on a traditional cookie dough recipe! I used vanilla instead of brandy, and used dark brown sugar. I would also recommend using a good white chocolate chip, like Ghirardelli, and Craisins (sweetened dried cranberries). My son ate a half dozen as soon as I got them out of the oven!

Baked Ziti I

Great weeknight Italian dinner for the busy cook! I added in some button mushrooms and dried basil. It made a lot, and I can't wait to have the leftovers tonight! I served it with some garlic parmesan biscuits...it was delish!

Oatmeal Cinnamon Chip Cookies

I have used cinnamon chips in muffins before, but this was the first time I have used them in a cookie recipe! These are now my favorite oatmeal cookie! They are crisp and chewy and they wont last long. Great alternative to the traditional oatmeal cookies!

Irish Chicken and Dumplings

This was a really simple and tasty recipe, just like a traditional Pennsylvania Dutch dinner! I used fat free chicken broth instead of water, and reduced fat cream of chicken soup. In order to save time, I also used a roll of Pillsbury refrigerator biscuits, cut into quarters for the dumplings.

Garlic Prawns

I made these this summer for a back yard BBQ, and used jumbo tiger prawns...the marinade was out of this world. It did not over power the taste of the delicious shrimp! The recipe goes perfectly with a light dry Chardonnay!

The Whole Jar of Peanut Butter Cookies

I didn't add the chopped nuts, I find most people don't like them in traditional PB cookies. This cookie was good, but still isn't exactly what I am searching for. It was really peanut buttery, but a little dry. I did watch how long I baked them...but they still turned out a little crumbly.

Angel Hair Pasta with Shrimp and Basil

You really can't go wrong with this recipe! I used bow tie pasta and it was such a pretty dish. The key is using a white wine that you like...if it doesn't taste good to drink, you wont like it in the recipe. I also cut back on the Olive Oil, and added some baby scallops. It was perfect!

Cream Cheese Frosting II

This is the perfect simple cream cheese frosting, it was just what I was looking for to frost a spice cake! Homemade is definitely the way to go! I would suggest slowly adding in the powdered sugar until you reach your desired consistency. I also used a no salt added sweet cream butter and a reduced fat cream cheese, and no one knew the difference. Hey…every little bit helps ;)

Cheeseburger Meatloaf

Good old fashioned comfort food! I used a very lean ground beef, and jazzed it up a bit with Worcestershire sauce, A1 Steak sauce, and garlic powder. I stuffed it with sauteed onions and mushrooms, and topped it with some crispy bacon. It tasted just like a bacon, mushroom, cheeseburger!

Burrito Pie

I can't say enough about this recipe, especially if you love burritos like I do...but can never quite get them wrapped right! I cut the recipe in half, and still had half a dish left over! I used a round deep dish casserole, which the tortillas fit in perfectly. I only changed the recipe to make a healthier version, but honestly you don't lose any of the taste! I used ground turkey, whole wheat tortillas, fat free re-fried beans, and reduced fat cheese and sour cream. I did follow other reviews advice and added taco seasoning to the meat along with a little ground cumin. Instead of the can of tomatoes, I used a homemade Mexican chunky style salsa and a homemade black bean and corn salsa to add into the meat mixture. I also did not mix the re-fried beans as another review suggested, I spread the re-fried beans onto the tortilla and placed that over the meat mixture! I usually never go for seconds, but with this, I couldn't help myself!
