Awesome Pasta Salad

This a favorite summertime recipe that I love to take to picnics! I omit the pimentos, and I add black olives, pepperoncini peppers, and a combination of fresh mozzarella and provolone cheeses. I use Ken's Steak House light Northern Italian dressing, it's wonderful in this!

Grilled Corn in Husks

The fresh parsley really enhanced the flavor of the sweet corn, I also added some minced garlic and the parmesan cheese added a nice salty flavor!

Chicago Style Stuffed Pizza

Brown Sugar Banana Nut Bread I

This was a nice base for banana nut bread...I tweaked the recipe to suit my own tastes. I used half brown /half white sugar and pre-sifted my flour so it would not turn out too dense, which sometimes happens with banana nut bread. I added a packet of instant banana pudding for additional flavor and moisture, along with some cinnamon and nutmeg. Oh…I also used very nicely ripened bananas for the best flavor. To bake, I used small individual loaf pans and they turned out perfectly.

BBQ Chicken Calzones

Sushi-Inspired Tuna Salad

This is my new favorite tuna salad...and I eat a lot of tuna! You can customize it to suit your individual tastes, and it works perfectly for low-carb lettuce wraps! To make it even simpler, you can buy the Wasabi Mayonnaise at your local grocery store!

Thai Noodles with Chicken

I have been craving Thai and this recipe sure did satisfy my craving! I loved the marinade; the only change I made was I left out the fresh cilantro (didn’t have any). The flavors really seemed to meld perfectly together!

Philly Steak Salad

Ok, I am from Pennsylvania and I am huge Philadelphia sports fan…and let me just say this salad is awesome! It really is like eating a Philly Cheese Steak without all the guilt. I added some sautéed fresh mushrooms and roasted garlic, and left off the garbanzo beans. In this area, some would also call this a Pittsburgh steak salad…what ever you call it, it is delicious! Believe it or not, the french fries make the salad!

Spaghetti Pizza Lasagna

I make a very similar version of this recipe that I call Baked Spaghetti. I use angel hair pasta, it holds together really nicely when slicing and serving it, and I always use a mixture of mozzarella and parmesan cheeses for more of an Italian flare. It’s such a quick and easy meal to prepare on a weeknight, but it’s still very yummy and satisfying.

Creamy Smoked Salmon Pasta

I found this recipe searching for something creative to do with smoked salmon and I sure was not disappointed! The only modifications I made were to make it a little healthier...I used way less butter (only like a tbsp) for flavor and 2 tbsp of EVOO, some fresh garlic, and fresh ground pepper. It was dinner and lunch for two day after...I didn't want to let any go to waste!

Lemon Horseradish New Potatoes

Yummy! These potatoes were the perfect side dish for a salmon dinner. They have a wonderful aroma and flavor! If you love horseradish as I do, you will love this recipe! I added some minced garlic and dried parsley flakes, I also doubled the horseradish, salt, and pepper! I can’t wait to make them again!

Tiramisu Layer Cake

OMG…this cake looked and tasted exceptional!!! It is perfect if you are really trying to impress someone! I made this cake for two of my best friends (they are twins), who love tiramisu, for their birthday and I got rave reviews! I added a bit more coffee (close to a full cup) and I increased the liqueur (Kahlua) to 4 Tablespoons. I made the cake in stages over three days; first I made a classic white butter cake recipe from scratch. The second day I made the coffee mixture to drizzle over the cake and the filling, I let that sit for a day, and lastly I made the whipped frosting and chocolate shavings/curls. I wish I could give this recipe 10 stars!!!

Tasty Tortellinis

This was a fantastic recipe...I loved the marinade! The only modifications I made was that I used dried spices (basil and parsley) because I didn’t have fresh on hand, and I added in some fresh grown cherry tomatoes along with chunks of fresh mozzarella cheese.

Spaghetti Salad III

I make a similar version of this recipe that I call Linguini Salad. I use 1 box of Linguini, broken in half, and Ken's Steak House Northern Italian Romano dressing. Instead of Italian seasoning, I use a couple of tablespoons of McCormick's Salad Supreme (to taste). I also do not add in the cheddar cheese, but I do usually add some fresh grated Parmigiano Reggiano cheese. I constantly get asked to make this for picnics and BBQ's...it's a wonderful twist over the traditional pasta salads.

Garlic and Onion Burgers

This is a great burger recipe to use if your flame grilling...instead of the italian seasoning blend, I used Montreal Steak Seasonings. Everyone at my picnic wanted to know the secret!

Italian Pasta Salad I

This is one of those recipes which allow for as much or as little liberties as you like! I personally love to jazz this Italian pasta salad up with half moon slices of pepperoni, cubed mozzarella and smoked cheddar cheeses, black olives, small pepperoncini peppers, and little grape tomatoes! It could be a meal in itself!
