Wildfire Sausage Meatballs

Yummy and what interesting twist on the same old, same old cocktail meatballs. I used seasoned Italian breadcrumbs, Parmigiano-Reggiano cheese and followed other reviewers advice and baked them on a cooling rack placed in the baking sheet. They were delicious!

Baked Potato Casserole

What's not to love about this recipe...tastes even better then a loaded baked potato! I am not sure why the recipe states not to substitute low fat mayo, I used low fat mayo, sour cream, and a low fat cheddar cheese blend and it was to die for...no one knew the difference, it was still rich and creamy packed with flavor! I put the potatoes in the microwave for 10 minutes first before I cubed them which really cut down on the time!

Blue Cheese Garlic Bread

OMG...I'd give this recipe 10 stars if I could! I substituted fresh roasted garlic instead of the power...that's a must! And I also added in a couple of dashes of white pepper. Next time I might even add a couple dashes of hot pepper sauce just because I like things with a kick! The topping got all bubbly and golden, it was delicious!!!

Cake Balls

I had a boxed cake mix and container of frosting in my pantry that I was trying to find something interesting to do with because I typically like to make those from scratch, and this was quick, easy, and so impressive! The possibilities on the combination of different flavors is endless. I'd like to try red velvet and cream cheese, and pumpkin and cream cheese next!

Pasta with Kielbasa and Sauerkraut

Living and growing up in Pennsylvania Dutch country this recipe really sparked my interest. I did make a lot of modifications, first of all I added more white wine, and a lot more seasonings to the kraut and sauce. I added 1/4 tsp. caraway, 1/4 tsp. fennel, 1/4 tsp. white pepper, and a couple of dashes of thyme. I wanted the sauce to be a little saucier, so I also threw in a can of cream of mushroom soup...it was really tasty and different, not the same old, same old!

Seafood Enchiladas

This recipe is five star worthy with some modifications. I am glad I read the reviews because I doubled the sauce and added in a can of shrimp bisque soup for additional seafood flavor. I also added some fresh chopped cilantro, chipotle pepper, white pepper, cumin, and coriander. I mixed some of the sauce into the crab meat mixture and used shredded chipotle cheddar cheese...they were truly restaurant quality!

Blue Cheese Burgers

I made these last night and they were great summer burgers on the grill! I actually used ground buffalo meat, and doubled the spices, plus threw in some minced garlic and white pepper. Served them on grilled onion rolls along with sliced red onion, lettuce and tomato...delish! My husband who isn't a huge bleu cheese fan even raved about the flavor!

Cordon Bleu Chicken Rolls

My family just loved this recipe! I added a little garlic powder, white pepper, and a couple of sprinkles of cayenne pepper and smoked paprika to the cornflake mixture. For the sauce I also added a little white wine to thin it out a bit. It was really, really good...no leftovers, the kids went back for seconds!

Momma's Wine Cake

A cake with wine...now that caught my eye! Ok, let me start by saying I love to make my own cakes from scratch, however...this bundt cake was fantastic with a little semi-homemade kick! The cake was so moist and flavorful! The only thing I changed with the recipe was to reduce the oil by 1/4 cup and replaced it with applesauce, and I followed other reviewers advice and dusted my bundt pan with cinnamon/sugar. I also made a cream cheese and white chocolate drizzle to go over the top...the entire cake was gone before I knew it!

Penne with Spicy Vodka Tomato Cream Sauce

I played with this recipe a bit...I used tomato sauce (just because I didn't want a chunky sauce). I added more vodka (Grey Goose), and a 1/4 cup Parmigiano-Reggiano cheese and a 1/4 cup of romano cheese...there wasn't a drop left over. Served with a crusty italian bread, it was out of this world!

My Crab Cakes

One word, WOW! I made this recipe with only a few modifications...I took others advice and didn't saute the green onions. I chopped them along with the crackers in the food processor. Additionally, I added fresh chopped garlic, a little white pepper, and a few dashes of worcestershire sauce. These crab cakes were to die for!!!

Cajun Style Baked Sweet Potato

I am not a huge fan of sweet potatoes, however this recipe won me over!!! I made exactly as directed, the only change was that I tossed everything in a ziplock bag and baked them a little longer. They were crispy, flavorful, and delicious!!!!

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

I think this dish is what convinced my now husband to propose to me!!! I used good lump crab meat, not claw...the sauce was to die for! This is definitely the perfect meal for a nice romantic dinner...but it does take some time to prepare, but sooooo worth it!

Who needs take out when this dish can be created right from the convenience of your own kitchen without too much effort!?!? The only thing I'd recommend is to use low-sodium soy sauce!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Wow, this was an awesome side dish! We love anything with mushrooms, so I am always trying to come up with new ways to use them. I followed a lot of other reviewers advice and sauteed the chopped asparagus with sliced baby portabella mushrooms, along with 2 cloves of garlic. I used the garlic and herb Boursin cheese, and thickened the sauce with some white wine and cornstarch. I topped the dish with fresh grated Parmesan cheese and crushed red pepper flakes...it was sooooo good!

New England Clam Chowder I

I really impressed myself with this recipe! I added some diced celery along with some shallots for a milder onion flavor...and I doubled the amount of clams! Also, I went all out and served this in Panera sour dough bread bowls...out of this world!!! ...Not a drop left over!
