Dee's Mexican Rice

My search has ened for a good Mexican rice dish...I made this once as a side dish, and then the second time I added in some ground turkey and made a meal out of it. Leftovers are great too!

Baked Omelet Roll

I am arguably the WORST omelet maker....seriously, no matter how hard I try or careful I am, I never get that nice fluffy folder over omelet with the cheese and toppings all tucked inside...mine always ends up to be a scrambled egg mess. This recipe is ingenious! You don't get much easier and you can add whatever toppings you like, I just made a Spanish omelet roll this past weekend...Thank you Eric!

Jasmine Rice

This was a wonderful accompaniment to my grilled cedar plank salmon, it has such a mild, but oh so fragrant taste. I substituted shallots for the onion, I love the milder onion flavor from them. I also used 2 cups chicken stock and 1 cup of white wine, and added in some sauteed minced fresh garlic and baby bella mushrooms. I can't make to make this dish again and again!

Beef Stew VI

I used beef stock instead of the bouillon and water. I also added in fresh garlic cloves and a couple bay leaves...this is such a comforting meal!

I don't know why I didn't do this sooner, what a way to save veggies and herbs from going bad in the frig! I could not find the ajies dulces peppers or culantro, so I just used what I had on hand, threw in some fresh basil and a about a tsp of Adobo seasoning. I used this in Arroz con Gandules and froze the rest in freezer bags so I have them on hand when I don't have the time to chop up all those fresh veggies! This will be a staple in my recipe box now!

Pad Thai

You really can do take-out at home with this recipe. I omitted the chicken and served this as a side dish with sweet-n-sour chicken meatballs, added in some fresh chopped garlic and a couple of splashes of low sodium soy sauce....DELISH!

Smoked Salmon Spread

Very elegant, I served this as a spread for bagels for a back to school brunch I had for my kids! I loved all the flavors and the fresh herbs and I added a splash of fresh squeezed lemon juice!

California Italian Wedding Soup

Yummy, yummy, yummy...I love soup in my tummy! I made the meatballs with a mixture of Italian sausage and ground beef and baked them in the oven for 10 minutes. I hunted high and low, and thankfully I found acini de pepe pasta for a more authentic wedding soup! Topped it with fresh shaved Parmesan Reggiano curls. Leftovers were even better the next day. The fresh lemon and herbs make this soup!

Clone of a Cinnabon

Wow, Wow, Wow...I can now see why this recipe is rated so highly....I wish I could give it more stars!!! I used my KitchenAid mixer to make the dough, it turned out perfectly. I also took some other reviewers advice and mixed the butter, brown sugar, and cinnamon together and then spread it all over the rolled out dough. I was always afraid to try this recipe, but so glad I did....they turned out picture perfect. I did lower my oven temp to 350 on convection bake.

Hamburger Steak with Onions and Gravy

This recipe was pretty tasty....a nice comfort food. I added some fresh garlic and dried onions to the meat, and I grilled my hamburger "steaks", and then caramelized the onions along with some mushrooms and made my own gravy from beef stock and cornstarch. Smothered the "steaks" with the onion mushroom gravy and served with mashed potatoes.

Vanilla Glaze

You can't go wrong with this glaze, I used it on top of a fresh baked cinnamon raisin bread....it was perfect! You can make it as thin (like a drizzle) or thick as you'd like by adding in more or less confectioners sugar.

Blackened Shrimp Stroganoff

WOW! I made my own fresh roasted red peppers, and added in some fresh roasted garlic....this dish was so good and worth all the effort. I like things spicy, so next time I will add more cajun/blackening seasoning. I loved the capers with this!

Spicy Chipotle Turkey Burgers

Sooooooo good! I added in some fresh minced garlic, 2 adobo chili peppers, some white pepper and they were fantastic! Topped with a spicy cheddar/jack cheese and a homemade chipotle mayo, lettuce and tomato!

Fresh Asparagus and Chicken Casserole

Great casserole recipe! I used low-fat sour cream and the rest was unchanged. We really enjoyed this. Sprinkled the top just before serving with fresh grated parm-reggiano cheese, and served with a crusty bread!
