Raspberry and Almond Shortbread Thumbprints

These cookies are not only impressive, they are mouth watering delicious! I made the "thumb print" indentation with a wine bottle cork, and filled the centers with a seedless raspberry preserve that I heated on the stove for an easier consistency. I alternated the drizzle every other cookie with a semi-sweet chocolate and the almond glaze, using a zip lock baggie to pipe the glaze. This has got to be the most simple, yet impressive cookie I have ever made!

Buffalo Style Chicken Pizza

If you love buffalo chicken wings this is the recipe for you! I made individual pita pizzas for my family with this recipe, each just the way they like it...mild, medium, and suicide! The only change was that I mixed mozzarella and sharp cheddar cheeses, and topped it with a little fresh ground pepper! Update - Now when I make this, since it is always requested, I add some chopped celery and gorgonzola crumbles.

Down Home Macaroni and Cheese

This recipe is sure to please every Mac & Cheese lover, young and old! For a healthier version, I used reduced fat Velveeta and Cheddar cheeses. I used 1% milk (only about a cup and a half), and aprox. 3 tablespoons of butter instead of a 1/4 cup. I also used reduced fat Ritz crackers for the topping instead of bread crumbs, and the recipe still came out rich and creamy! For something different, I also threw in some cut up chicken hot dogs, for a hot dog macaroni casserole....Yummy!

Hot Bruschetta Dip

I have got to admit that I did cheat and use a store bought Bruchetta for this recipe...but let me just say this recipe is fabulous!!! I was browsing for a simple, yet elegant appetizer...and this recipe is just that! I served it with garlic bagel chips and it goes so well with red or white wine!

Creamy Pesto Dipping Sauce (For Veggies)

I just have one word for this...WOW!!! I am so glad I found this recipe! I had some pesto that I didn't want to go to waste, and I was so tired of the traditional spinach/ranch veggie dips! It is simple yet very elegant, and most likely you will have all the ingredients in your frig. I did use a whipped cream cheese, and low fat sour cream, just so I wouldn’t feel so guilty. I served this at a dinner party with assorted veggies and wine and cheese for an appetizer…but after the dip was devoured no one was really hungry for the main course ;)

Ultimate Twice Baked Potatoes

I only modified this recipe to make it a little more healthy, because it is just about perfect! I rubbed the potato skins with EVOO and wrapped them in foil to bake, like I always do for baked potatoes. I completely omitted the milk and reduce the butter to 2 tablespoons and used light sour cream and 2% shredded cheddar cheese. I also added a little garlic powder along with the salt and pepper for extra flavor.

Buffalo Chicken Fingers

This is a perfect quick and easy recipe when your in the mood for appetizers for dinner! I used crushed corn flakes in place of the bread crumbs and also added black pepper to the garlic powder, salt, cayenne mixture. The corn flakes give it a great crunchy texture! I served them with a buffalo and blue cheese dipping sauce.

Mexican Lasagna

Really simple Mexican dish! I cooked the noodles according to package directions, and omitted the water. I also used a store bought homemade black bean and corn salsa, we had no leftovers...I couldn't believe the entire lasagna pan was empty after dinner!

Seafood Lasagna I

I took the advice of several reviewers and made the following changes...and this recipe was Perfect!!! This is a seafood lovers dream dish! I substituted Ricotta Cheese for a creamier texture, and I used fresh lump crab as well with small scallop pieces. Additionally, I used a mix of cream of mushroom & cream of chicken & herb. I also cut down on the milk & wine so it wouldn't be watery.

Raspberry Vinaigrette Dressing

This is a very good refreshingly light dressing. I used EVOO (extra virgin olive oil) and served at a dinner party over over mixed greens, with crumbled blue cheese, walnuts and dried cranberries.

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe is everything it is touted to be! I would recommend using a light colored pan and parchment paper...to keep from burning. Also, chill the dough for at least 10-15 minutes to prevent spreading.

Alfredo Light

Who needs the guilt associated with Alfredo sauce when this recipe is sooooo good, you would never know the difference! I used more garlic and fresh grated Parmigiano-Reggiano cheese and white pepper. I won't make Alfredo sauce any other way now!

Sloppy Joes II

This is one of those recipes you can take a lot of liberty with to suit your own taste. I added, Worcestershire sauce, Red Pepper flakes, and fresh garlic. I also reduced the ketchup and added some chili sauce. Perfect menu to serve to a bunch of guys on football Sunday!!!

Spiced Applesauce Bread

I found the perfect recipe to use up some extra applesauce I had in the frig! I made muffins out of this recipe to take into work for a Monday morning treat. I used half white sugar/half light brown sugar, and only a 1/4 cup of oil. You can also use Apple Pie spice, which combines all the spices in this recipe into one.

Pan-Fried Asparagus

Simple elegant side dish and so quick to make. I did omit the butter just to make the recipe a little healthier, with EVOO (extra virgin olive oil)...who needs butter. I would also recommend using fresh ground black pepper, and roasted minced garlic!

Whipped Cream Cream Cheese Frosting

Who needs store bought frosting when you can make a recipe as tasty and easy as this one? I would recommend allowing the cream cheese to get to room temperature before creaming with sugar, etc.

Magic Peanut Butter Middles

This is one of those cookies that you can't just have one. I love the surprised look on everyone’s face when they thought it was just a chocolate cookie when they tasted the peanut butter inside. I call them Peanut butter surprise. I chilled the peanut butter mixture and the cookie dough before rolling them into balls. I had no trouble at all. Can't wait for an excuse to make them again!!!

White Chili

This has got to be the easiest, yet most impressive recipe I have made! I used a local stores homemade corn and black bean salsa, and chicken broth instead of water. I also added another can of beans (mashed) to thicken the chili a bit, and added a little ground cumin and roasted garlic to the ground turkey. I didn't have any trouble finding the jalapeño pepper cheddar cheese, or have any problems with it melting. I served it with a griddle corn cake! Fantastic 30 minute meal!

Crab Salad III

All I can say is WOW, this is a fantastic recipe! I did take some liberty; I omitted the radishes (seemed odd for this recipe) and added some chopped red pepper along with the green. I also threw in some chopped cooked shrimp, and used old bay instead of dill, and sugar instead of artificial. Don’t expect any leftovers if you take this to a picnic!

Chewy Sugar Cookies

These were just Ok, nothing special...still looking for the perfect sugar cookie recipe. I did shape the dough into a log with plastic wrap, and then sliced them into perfectly shaped little round cookies, and deorated them with colored sugar.
