Baked Dijon Salmon

I'm not a huge fan of salmon, but this was out of this world! I served it at a dinner party and it was a huge hit, one guest who does not like salmon was blown away and took home my copy of this recipe. I did use dried parsley because we had no fresh, but I don't think it changed the flavor. This is amazing!

Roasted Beets with Feta

The best beets we've ever eaten. I used green onions instead of shallots and I didn't have wine vinegar so used balsamic instead. These were so good we were craving them the following day and I think they were even better. Until yesterday I thought canned beets grew on trees! They were much easier to cook than I imagined. This will be a regular recipe for us.

Pecan Bars by EAGLE BRAND®

If I could rate this higher I would. It tastes a lot like pecan pie, but I like it better, very moist and oh so good. This was a huge hit with everyone, even my grandson who doesn't like pecan pie. I didn't have light syrup, so I used the dark. I don't know if my oven is slow, but I had to cook it quite a bit longer than called for (55 minutes), the center was a bit gooey when taken out of the oven, but no longer jiggley, but they turned out perfect when cooled! I just took another batch of them out of the oven for a party tomorrow. I'm printing up recipe cards to share with everyone.

Honeyed Sweet Potatoes

With some additions this was a big hit. I substituted some of the honey for maple syrup, added cinnamon, baked it much longer with no covering, basting from time to time, the last 15 minutes I added pecans and sprinkled with some brown sugar.

Sweet Dill Pickles

I just love the sweet and slightly salty taste of these pickles! I added onion and bell peppers to mine and had better pickles than my old recipe with much more ease of preperation. Everyone loves them, and you can't find anything close to this tasty in a store. I bought a gallon jug of dill pickles at Sam's and packed mine in plastic storage containers in the refrigerator. They go quick.

Dog Treats I

My dogs went crazy over these. I may not have baked them long enough because they are not very hard, so I decided to taste one and they are really good! Due to the problems with store bought dog foods and treats lately, I will make these every week for our three poodles.

Apple Dumplings I

A big hit even with my husband who normally doesn't like pie crust. I used Golden Flakes honey butter biscuits and for the sauce I added sugar to the butter on the stove to disolve it, then added nothing more than the vanilla and I poured that over the dumplings. To die for!

Ray's Chicken

A HUGE hit at our cookout!!! I didn't change a thing, the meat was so moist and full of flavor, yet not over powering. I got so many compliments. It was worth mixing all of the ingredients, and what a wonderful aroma!

Eggplant -- Easy, Good and Tasty

My husband hates eggplant, so I rarely ever cook it. I made this recipe and he loved it!!!! I'm so excited. We had it with filet and I prefered the eggplant over the steak, it's that good. I didn't have Italian dressing so I used someone elses idea and substituted ranch. I'd give this one 10 stars if I could.

American Lasagna

Awesome! Everyone thinks I make a good lasagna, but this beat mine hands down. I accidently added a 29 ounce can of tomato sauce along with the diced tomatoes (not paying attention), but it still came out perfect.

Spanish Rice Bake

This was wonderful!! We couldn't help but have seconds. I used 2 cans of tomatoes after reading the other reviews. I didn't have a bell pepper so I used Mexican style stewed tomatoes, I used basmati rice and no cumin. I did use some extra water (about 1/2 can or more), covered it and it was done in the suggested amount of time. I don't care for very spicey foods, this was just right. So delicious!!

Broccoli Cheese Soup
