Veggie Delight on Garlic Bread

I omitted the basil (and garlic powder) and spread the baguette slices with basil pesto I made with basil from my garden since I wanted to use it up and this was amazing. I also used white eggplant which I peeled since I wasn't sure how the texture would turn out unpeeled. I brought it to a party and got lots of compliments.

Easy BBQ Flank Steak with Chipotle Mayo

Ugh, this is a hard review. I had two flank steak from Costco so I decided to do one this way and one with Yoshida's Teriyaki marinade from Costco. My husband said this was very good but the whole family preferred the teriyaki one. Not a fair comparison but while this one was very good, I probably wouldn't make it again.

Grilled Lemon Chicken

I gave it a 5 even though my kids thought it was "bitter". My dh and guest said it was good. I served it with salad and made a dressing using the same ingredients but I added honey. I think I will add honey to the marinade next time so everyone is happy.

Chris's Incredible Italian Turkey Meatloaf

I used 1.5 lbs of ground turkey and no turkey sausage since I didn't have any. I just topped with ketchup since it was for my kids and they wouldn't care for a fancier sauce. Everyone was happy.

Eggplant Parmesan II

This was so good! I used fresh buffalo mozzarella because that is what I had on hand. I just put it on top (so no cheese in the middle) and it turned out really great. I can't believe how easy this was.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

I ate so much my tummy hurts! I used ono because I don't eat farm raised tilapia for health reasons. My daughter said it was too limey for her tastes. I think I would skip the honey cumin lime glaze at least on her piece next time. For me it was perfect!

These are good. I ate mine without syrup since they were already sweet enough. I don't think it makes 5 servings. Just enough for a my family of 4 (two small children) I'd double it next time.

Oregano-Lemon Chicken

I have no idea how to rate this. My dh didn't like it at all. He wouldn't say why but just that he didn't like it...then later he dipped a leftover broccoli in the baking dish and said the sauce was good. My kids ate it up but I gave them honey to dip it in since it seemed a little lemony. I don't eat meat so I can only go by their reactions.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I was looking for something to do with asparagus, mushrooms, and pasta and this came up. I didn't have boursin so I used 4 triangles of Laughing Cow Creamy Swiss and a few Tbls of cream cheese because that is what I had. I let the sauce come to a boil and it thickened right up. I added garlic powder and a little parm. for flavor since I wasn't using red pepper boursin. Everyone was happy. Oh I served it with chicken breasts that I seasoned with "Essence" sauteed in a pan with butter and olive oil.

Baked Chicken Nuggets

I couldn't have made my kids any happier. I only had plain crumbs so I added two tsp of italian seasonings, skipped the extra herbs since I was out of basil and they still tasted great.

Marinara Sauce II

I loved this. I used 2 cans of crushed tomatoes instead of the whole tomatoes since my dh likes a smother sauce and I would have had to blend it up anyway. Anyone who thinks this is bland or lacks flavor is probably not looking for a marinara sauce but rather a spaghetti sauce.

Creamy Macaroni and Cheese

This recipe is true to it's name and it turned out o.k. and creamy it is just not to my taste. I guess I like a more sophisticated taste. It taste like something you would get at a buffet or a cafeteria. I know that sounds snobby, sorry. If you are looking for a creamy, kid friendly recipe you will love this. If you are used to something a little sharper and sophisticated (I like Cooking Lights "Smoked Gouda Mac and Cheese, for example) then you should move along.

Shrimp Fried Rice II

I used precooked brown rice and replaced the bean sprouts with peas and carrots. I couldn't imagine it without them. I also didn't use salt or pepper. We all really like it. Next time I would make sure the eggs set up a bit before I mix them in. The flavor was great.

Brown Rice and Black Bean Casserole

To be honest, I really didn't make this recipe but I was inspired by it and used what I had on hand. I took 3 cups of cooked brown rice, 1 family sized can of drained black beans, and mixed them with onion and zucchini that I sauteed in olive oil and seasoned with cumin and garlic powder. I put in a casserole pan and topped with cheese. It was absolutely delicious. So do this recipe even if you don't have everything on hand.
