Bou's Chicken

Reviewed: Sep. 21, 2008
I liked this recipe. It was very easy to make. I used chicken quarters because I had a package in the freezer, but I think I would like it with boneless skinless breast the next time. I would also add some sliced onions and serve with egg noodles. I made the sauce in a fry pan and added the chicken put the lid on and forgot about it. It doesn't get any easier than that. Oh I also thickened up the sauce with some corn starch and it worked great. Thanks for sharing.

Downeast Maine Pumpkin Bread

Reviewed: Sep. 20, 2008
Not that this needs another good review, but it is a great bread. My daughter, who is now the chief baker in the family was able to master this one. It made 2 loaves and they are dense, moist and all around tastey. Thanks for sharing. I'm sure she will be making this one again. By the way, she is 13!

Aunt Tootie's Pineapple Pie

Reviewed: Sep. 14, 2008
I'm on the fence about this one. The flavor and the texture is good. It is not as sweet as I thought it would be. The initial layer taste more like a custard. I thought it would taste more like a cheese cake? Also, mine got so runny that the pinapple sunk in some spots. I think it is supposed to have 2 distinct layers. I have never had pineapple pie and I had all the ingrediants in the pantry so I gave it a whirl. Thanks for sharing.

Kielbasa and Kidney Beans

Reviewed: Sep. 13, 2008
This was fast, easy and tastey. Best of all, I had every ingrediant in my pantry. They only change I made was to cut the brown sugar from a 1/4 to 1/8. I left all the other measurements the same. It had that sweet/savory thing going on without being overly sweet. I have learned on this site to cut the sweet in half. Thanks for sharing. I will make this again.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Sep. 3, 2008
This was easy to prepare and I had every thing in my staples which is always a bonus. The chicken is flavorfull and moist. I only wish I had reduced the liquid down more for a more syrupy sauce then added the mushrooms. I think the mushrooms were preventing my sauce from really reducing. Thanks for sharing.

Thai Curry Tofu

This was ok. I added some peas and carrots for a one pot meal. My daughter and husband went back for seconds. I didn't have any cilantro and I wonder if I would have enjoyed it more with that? I probably wont make again, but thanks for sharing. This continues our one meatless meal a week program.

Kielbasa Skillet Stew

Reviewed: Jul. 10, 2008
I thought this was ok. It was a nice way to cook kielbasa. There was a spice that was overpowering in it either the thyme or a spice in the Italian seasoning. I think I would use different spice if I did it again. It was an economical meal and tasted fine, just nothing spectacular. Thanks for sharing.

Moroccan Chicken

Reviewed: Jul. 9, 2008
I really enjoyed this recipe. It was very flavorfull. I didn't know what crushed tomatoes were and I used tomatoe sauce and served over rice. The chickpeas I dumped the whole can in and they were a little much, but what do you do with half a can? I will make this again for sure. I can think of many possibilities with this tofu instead of chicken or just the chick peas for the protein. Thanks for sharing.

Fabulous Wet Burritos

Reviewed: Jul. 9, 2008
This is a good recipe and easy to make. A lot of the reviewers are saying they used tomatoe sauce, but the recipe calls for tomatoe soup- either way I didn't use either. I used a can of green enchilado sauce instead (28oz) I probably could have gotten by with the smaller can. I also subbed black beans for refried just a personal perference. Other than that I kept it all the same. My kids enjoyed it and it was a good way to use ground beef. It also came together very fast. I also skipped the nuking and put it in the oven until the cheese melted and the sauce was bubbling. Thanks for sharing.

Baked Beans, Texas Ranger

Reviewed: Jul. 6, 2008
These were good, but were a little sweet for my taste. I made the recipe as follows except I did not use the hot sausage and I only used one T of chili powder because mine is fresh and spicey. I used 2 cans of beans and drained the one can, but I wish I had drained both. I think it ends up soupy because the lid is kept on the beans the entire cooking time. Next time I make these I will cut the brown sugar down to 1/4 C, drain both cans of beans and take the lid off the last 15 minutes of cooking that should allow the beans to thicken up a bit. Thanks for sharing.

Grilled Bacon Jalapeno Wraps

Reviewed: Jul. 6, 2008
I liked this recipe. It was easy and tasty. I did not change a thing, but I did put them in the freezer for about 15 minutes before putting them on the grill. I did not think they were spicey, but I took all the ribs and seeds out of the pepper. I didn't bother with securing them with tooth picks and I didn't have any issues with leakage or unwrapping, but I tucked the bacon in as I was wrapping. I also was able to do these a day ahead which is a bonus in my book. Thanks for sharing this recipe I will be making this again.

Spicy Basil Chicken

Reviewed: Jun. 30, 2008
I really liked this one. My DH said he could only taste the black pepper. I only did 1 T of chili oil and 1 hot pepper because I have kids. Next time I would put the 2 T's in and cut back on the black pepper a little to maybe half. I used green onion instead of white because of a personal preference and I would have added a lot more basil to the dish. I will make this again thanks for sharing.
