Truck-Stop Buttermilk Pancakes

Each "serving" makes around 4 (1/4 cup batter) pancakes. That's a lot of pancakes! I had to add about 1/3 a cup extra of flour for 5 servings. Wonderful though!

Butter Mochi Cake

The "scant teaspoonfuls" were too small and stayed on top (bottom) of my cake. Next time I'll drop more like TBs and try to shove some into the batter. Overall very good :)

Ultimate Twice Baked Potatoes

I used 3 large potatoes (microwaved), 3 pieces of bacon, 1 cup of cheese, no green onions, everything else the same. Then whipped in a blender. It was wonderful!

Marinated Grilled Shrimp

I used 1 pound of shrimp, double the garlic, balsamic vinegar instead of red wine vinegar, then steamed it (instead of grilling like "Lynn S" suggested) added a can of diced tomatoes with basil, oregano, and garlic, then served it on angel hair pasta. This was the BEST shrimp I've ever had!

Thai Noodles with Chicken

This was really yummy! I made a few changes though: I used a whole bag of frozen "stir-fry veggies" instead of just snow peas, didn't use any cilantro, and used chow mein noodles instead of rice noodles. There was plenty of sauce left over (I ended up throwing some away as I didn't want the noodles too wet) even though it was really good.

Strawberry Trifle

Wow!! This is so yummy ~ It was gone in 2 days (between 4 people). I'm making it for the second time in two weeks. I used sugar-free pudding mix, and fat free cool whip.

Tofu Burgers

I had a hard time getting these to stick together, so I added a torn up bread roll to the mix and it worked great. I also cooked these in the oven. Yummy!

To Die For Blueberry Muffins

I followed the directions exactly, and they were okay. Nothing special, and they stuck to the paper wrappers really bad. I'll just make the box kind next time - it's a lot quicker and tastes the same.
