Luscious Triple Lemon Easter Cake

Reviewed: Apr. 29, 2010
Loved the curd - very tart and not to sweet. The cake was also very moist & went well with the curd. I was not, however, as happy with the frosting. It was too sweet and not lemony enough for us. I may try a lighter whipped cream frosting the next time I make it. On the whole though, this cake ROCKS. Thanks for sharing! I did make a couple of changes. Instead of 3 whole eggs, I used 3 egg whites plus one extra egg in the cake batter (I didn't want to waste the whites left over from the curd). I also added a 1/2 tsp. of lemon extract instead of the 1 tsp. of vanilla.

Whoopie Pies IV

Reviewed: Feb. 19, 2010
Very good recipe - especially since we have a raw egg allergy and many of the other recipes call for egg whites in the filling. I've made the recipe twice now and I've used unsalted butter in place of shortening and have not had any issues with the frosting or cake. Also, the cake part rises much more if you let the batter sit a few minutes on the baking sheet before setting it in the oven.

Easy Pesto

Great "starter" recipe. I added fresh parmesan and used a mixture of basils from my herb garden. Will make again, but will try with pignoli nuts and a bit less garlic.

Pork Tenderloin in Bourbon

Reviewed: May 7, 2007
This wasn't what I expected at all. In fact, I smothered the pork in BBQ sauce just to make it edible enough for my children to eat it. The bourbon flavor was very overpowering.

Asian Ginger Grill Marinade

Reviewed: May 1, 2007
I used this recipe on chicken breasts. It was pretty good. I think it was a bit too sweet for my taste. If I make it again I will add some chili powder to give it a kick and even out the sweetness. The kids loved it though.

If I could give 3.5 stars, I would. These took me a long time to put together and for the amount of work, I wasn't impressed. I'll just keep buying them from our favorite chinese take out.

Irish Soda Bread

Reviewed: Mar. 16, 2007
I have made this soda bread for a couple of years now. We always do a huge corned beef & cabbage dinner complete w/Irish coffees w/my husband's very Irish family. Let's just say that I'm not allowed through the door to eat unless I prove the bread is with me. Yes! It's THAT good!

Lemon Poppy Seed Loaf

Very moist and was a huge hit at church coffee hour. I added and extra 1 tsp. of lemon extract, but it still wasn't lemony enough for my taste buds. Will definitely make again.

Loved everything about this recipe except the canned shrimp. Next time I'll use the frozen salad shrimp instead and I'm sure it will make it a 5 star recipe.

Hot Fudge Ice Cream Bar Dessert

Reviewed: Feb. 18, 2007
This dessert was yummy and a cinch to make. I read the other reviews and decided to opt for caramel, hot fudge and toasted almonds. Not only did my children have seconds, but so did my company. I will definitely be trying this recipe again with the peanut butter and chopped peanuts.

Seafood Stuffed Avocados

These were very easy to prepare and were tasty, but I did feel they were missing *something*. I will be making them again, but adding some lemon/lime juice and more of the scraped out avacado mixture. I might even add some fresh dill the next time around.

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

Reviewed: Feb. 18, 2007
I made this recipe a few days ago as part of a special Valentine's meal for family. I omitted the crab stuffing as we had seafood stuffed avacados as a side, but I'll be trying this recipe again w/the crab at some point. This was the BEST recipe I have tried in quite some time. The whiskey peppercorn sauce was delicious and I got rave review from all who partook in the dinner. Thank you for such an elegant and easy dish.

Maple-Garlic Marinated Pork Tenderloin

Reviewed: Feb. 8, 2007
I've made this quite a few times and have loved it each and every time! I did make a few substitutions as follows: stone ground mustard in place of dijon and light tasting olive oil in place of the sesame oil. I also baked the tenderloin in a moderate oven and watched the internal temp closely as not to overcook. With the leftover marinade, I threw it in a saucepan on the stove and reduced it so I could add it back over the meat after slicing. This recipe is a keeper in my book!

Creme de Pirouline

Reviewed: Feb. 4, 2007
I'm not sure if it was just me, but I had a really hard time getting these thin enough even using a flat spatula & silpats. If they are not thin enough they end up being way too chewy. If they get too brown you have literally about 3 seconds to get them rolled before they become too brittle. The actual taste of the cookie was ok. I'm not sure I'll try these again.

Almond Cranberry Squash Bake

Reviewed: Nov. 24, 2006
I wasn't sure if I would like this recipe because it sounded so different to me, but the sweetness of the squash, the tartness of the cranberries and the crunch of the almonds were a perfect match! This will definitely become a keeper for our Thanksgiving table.
