Hearty Ham Casserole

I substituted 2 cups of O'Brien hashbrown potatoes for the potatoes and onion. I cooked them in the butter, then added the flour and milk. before mixing with the rest of the ingredients. I also mixed in 1/2 the cheese prior to baking. Delicious! This will be our leftover ham go-to recipe from now on!

Broccoli and Tortellini Salad

4 stars, because I modified it. And I think cutting the sugar in half counts as significant. But the flavors were good! I halved it, since I didn't need to eat it for a whole week. And I accidentally bought ravioli instead of tortellini (just wasn't thinking). I only used about 1/2 the sugar that the "halved" recipe called for. But it was very good. Husband said the raisins really made the salad! I agree!

Sunflower Chicken Salad

5 stars BUT I made modifications, but I love it the way I made it! I used dried cranberries instead of the grapes. I also used 3/4 tsp lemon pepper instead of salt and pepper. Also I only had sliced cheese, so I cut that into small pieces and the size of cheese was great. Small enough not to be overwhelming in a bite, but didn't get "lost" like shredded cheese can. I served it on a croissant! It was awesome!

Four-Bean Medley

This was good. I did make some changes, mostly because I wanted it to make a bigger batch. I used about 44 oz of baked beans total, and cooked a full pound of bacon. I also substituted 2 cups of frozen green beans (partially thawed) for the can of green beans. Very good. Will file this one to use again!

Rhubarb Cherry Crisp

This was excellent. As suggested by one reviewer, I made a little extra of the crust. I added an extra 1/3 cup of flour, brown sugar, and oats plus an extra 3 tbsp butter. I also used a little extra almond extract. Everyone raved and the whole pan was gone in no time!

Cranberry Icebox Cookies

I didn't have cranberries, so I used dried cranberries! Very good! I also froze the dough initially. Took it out a few weeks later, thawed and baked! Excellent!

Gingerbread Pear Cake

I didn't have pears, so I sliced an apple and used that. It was very good. I would like if it had been gooier caramel top. And would use apple or pear juice instead of water next time in the cake. But very tasty!

Really good! I used beef broth instead of water and also added an extra packet of Italian Dressing Seasoning. next time I doubt I'll boil the broth and seasonings either...

Slow Cooker Corn Chowder

4 stars because I made some modifications to the posted recipe after reading other reviews. 5 stars with my modifications... I added an extra can of corn plus a can of creamed corn. I substituted 12 oz chicken broth for the water, and used a pint of half and half (plus some corn starch) instead of the evaporated milk. It was sooo good!

Irresistible Pecan Pie

So easy! I made it with a premade crust. Substituted light corn syrup for the dark syrup, but then used dark brown sugar. Was my first pecan pie, and turned out excellent!

Gary's Turkey Burritos

I will make this again to see if I can up the flavor. I used ground beef, because that's all I had. Used 1 can of regular tomato sauce and about 1/2 cup of salsa instead of the hot tomato sauce. And added about 1 tbsp Southwestern Seasoning. Will probably add more seasoning next time. Loved the corn flavor in the dish!

Cinnamon Chip Apple Cookies

The only thing I did differently was added a bit more apple (probably another 1/2 cup) and used pear juice instead of apple juice, because it's what I had on hand. Some of the best cookies I've ever had!!! Yum!!!

Slow Cooker Sweet Potato Casserole

I modified this to use "fresh" sweet potatoes. I baked the potatoes and then mashed them. I also layered some of the topping in the middle of the crock. And I used crockpot liners to keep the potatoes moist and for easier cleanup. This recipe is a definite keeper!

Blueberry Zucchini Bread

Yummm!!! I made these today with some zucchini donated from a friend's garden. I substituted 1/2 cup white sugar with brown sugar. And made them as muffins instead. It made about 30 muffins, so I have some to freeze. Again, super good!

Pepper Jelly Glazed Chicken

Grecian Pork Tenderloin

Very good! I cut down all the ingredients in the marinade, by about a third, since I didn't have enough lime juice, but the flavor was still great! I think I would just put the garlic through the garlic press next time instead of peeling and slicing it. I will definitely make this again!
