Simply Swordfish

Simply Swordfish...Simple yet tasty. I planted my herb garden last weekend, so I was able to use fresh dill from my garden. The dill and lemon pepper flavor meld quite well together. As all the other reviewers have simply stated, the seasonings allow the true taste of the swordfish to shine through.

To Die For Blueberry Muffins

The reviews for this recipe are quite interesting...either you give the recipe 5 stars and loved the muffins, or you give it 4 stars and complain about the spill over in the oven because the muffin tins were overfilled. Well, 4 stars for me. We loved the muffins and the carmel-streusel topping. But the overflow from the muffin tin made a terrible mess on the bottom of the oven. Either fill the tins 3/4 full or make Jumbo muffins instead. But, all in all, delicious blueberry muffins with fresh blueberries that "pop" with every bite!

Cha Cha's White Chicken Chili

Total comfort food. This would be great for company too - - like during a Eagles' football game. I made this more like a hearty stew instead of a chili. I added cubed potatoes to thicken it up a bit. But there really is no reason why I couldn't have added some kick to it by adding the jalapenos. (I just didn't have any in the house). Oh, almost forgot, I did throw in arugula right before serving for some color and texture. This one is a keeper.

Cajun Red Snapper

Oh my, this was good. The only thing I added were buttered parmesan breadcrumbs on top to make a crunchy coating. The spiciness was fantastic with the fish. I actually made this twice in one week. Such an easy recipe because almost everyone has these ingredients in their pantry.

Rick's Caribbean Ropa Vieja

This was so-so. The sauce was good, a bit sweet. I left the flaked coconut out simple because we are not big coconut fans. I also used a crockpot, low for 7-8 hours. Served over white rice which was perfect for the sweet sauce.

Strawberry Trifle

Since I'm not a baker, this was the perfect recipe to make for Easter dessert. I used two containers of frozen strawberries simply because we love strawberries. I was able to make it Easter morning and it was not soggy at all by 5 p.m. It makes a ton so no need to double the recipe!

Dijon Garlic Salmon

Instead of tarragon, I used Herbes de Provence. I've never used that blend of herbs before and all I can say is WOW. It's a bit pricey, but the flavor these herbs bring to the dish is outstanding. My salmon turned out more like mustard-crusted, but it was delicious. Such an easy recipe with fabulous taste.

Crab Quiche

Doubled the recipe since I had a one pound can of lump crabmeat from Costco. (Popped one in the freezer for another night's dinner!) As other reviewers' have stated, you need to greatly increase the cooking time on this quiche or else you will have a soupy mess. I baked at 350 degrees for 45 minutes, and let sit for 5 minutes. It was perfect. My husband loved it just as it was - - I splashed some Tabasco for added zing. Serve this with a fresh salad for a quick 'company worthy' meal.

Slow Cooker Chicken and Dumplings

I did quite a bit of tweaking on the ingredients in this recipe, but they all were worth it since the meal was yummy. Instead of two cans of cream of chicken soup, I used one can of cream of celery and one cream of chicken. I also added a bag of frozen stew vegetables (pearl onion, carrots, potatoes). Some garlic and dried herbs were added next. And last, I used chicken stock in place of the water. I placed the refrigerated biscuit dough in with about 1-1/2 hours to go so there would not be the "gooey in the middle" issue. Homey, comfort food. I know I made a lot of changes to the orginal recipe, but they were all ingredients I had in my kitchen, so no worries!

Cheesy Brat Stew for the Slow Cooker

I wasn't sure what to expect with all the differing reviews. We enjoyed this, it was a bit like comfort food on a cold winter night. My "tweaks" were chicken stock in place of water (only because I had a container opened already) and I added one can of cheddar cheese soup since some reviewers said there was not enough liquid. Our stew was a touch soupy, but I prepared for that with a large hunk of crusty bread to soak up the sauce! Please keep in mind that even after 4 hours on High, the potatoes were still a touch hard, but not enough to stop us from eating dinner then. It was nice to find a recipe for bratwurst that was different, yet tasty.

Butternut Squash Bisque

Aussies love their "pumpkin soups". This recipe was #1 with my Aussie husband tonight! I had to use chicken stock because I ran out of vegetable stock. And I followed everyone else's advice of roasting my squash in the oven at 400 degrees for 35 minutes to softened it. While I added a few splashes of Tabasco to my steaming mug of bisque, my husband prefered his just like the recipe called for. I have a feeling this one will be going in the regular rotation in our house! Perfect for a freezing winter night!

Winter Fruit Salad with Lemon Poppyseed Dressing

FANTASTIC! The lemon poppyseed dressing is absolutely delicious. Be sure to use freshly squeezed lemons and not the stuff out of the yellow plastic containers - - it does make a difference. I used butter lettuce instead of romaine, but otherwise I followed the recipe exactly. The pears, apples, cheese, and cashews combined perfectly with the lemon dressing. One word of caution - - this fed three hungry adults (two helpings for the men). So don't be fooled by the "serves 12". Your family and guests will go back for seconds, trust me!

Stuffed Flounder

I was trying to find sole at the fish market but the prices were unbelievably expensive. One of the fish mongers recommended baby flounder so I went with that. I made this crab sauce for on top of the fish, along with a splash of sherry for added "oomph". Wonderful, mild tasting fish, and the sauce was decadent! The crab really made it ultra-gourmet.

California Grilled Veggie Sandwich

Trust me, you will not miss the meat in this sandwich! I also broiled my veggies because of the snow outside on top of the grill. The only veggie I added was green pepper only because I had one. I will use a large red onion next time because we love the carmelized flavor of the onion under the broiler. I also sprayed my veggies with balsamic vinegar for some extra "zip". Served the veggies on hearty multi-grain rolls from Whole Foods - - use the best bread possible because it truly will make or break the sandwich. Excellent recipe, Heather!!

Seven Layer Tortilla Pie

This is my first time attempting vegetarian cooking and my husband and I are loving it! This recipe in particular is down-right fantastic! So filling, so delicious, and so healthy. It reminds you of a lasagna, without the fat from the ground beef. For a heart-healthy alternative, you have to try this one!

Portobello Sandwiches

The write-up for this recipe was right - - it is juicy! My grocery store did not have focaccia bread when I got there after work so I used onion flatbread. The focaccia probably would have soaked up some of the juices. But don't get me wrong, this was very, very good. Very satisfying sandwich!

Lemony Fish in Foil

Curried Honey Mustard Chicken

Outstanding! My husband and I absolutely LOVE curry so we knew this dish was going to be a winner! I added more curry powder than the recipe called for, of course! I used lemon herb chicken from Costco and marinated this in the curry/mustard sauce for 24 hours -- the chicken was 100% fork-tender. This recipe will go in the rotation because it has ingredients that are always in the pantry. A side dish of mixed veggies made this a guilt-free dinner, too.

Why add the cheese and butter if you are trying to make it low-fat and low calorie? This recipe is fine without adding these fattening ingredients. Would be good with any mild, white fish.

Jambalaya Salad

No canned shrimp used in my dinner! I used fresh small shrimp and went with all the suggestions and used kielbasa instead of ham. You must add some creole spice to make it a true "jambalaya." Fabulous the next day, as everyone else mentioned! It's so helpful to have all the reviewers' suggestions, isn't it?
