Delicious Black Bean Burritos

Pretty good black bean burritos, with modifications. As written, they would be a bit bland. I added cumin, chili powder, and 1/4 cup of salsa. I might try to corn next time. Don't get me wrong, they were quite good. They just needed something more to add some punch to the meal.

Cod with Italian Crumb Topping

With modifications, this was truly divine. I used Japanese panko breadcrumbs and added cayenne pepper to the dry breadcrumb mixture for some "Oomph". I also spread fat free mayo on the fish instead of egg whites....the bread topping seemed to stick to it better. 12 minutes at 450 was perfect. The fish was so light, so healthy, and even add a hint of "heat" with the cayenne...something I truly think this mild dish needs.

Pesto Pizza

Out Of This World Delicious!! It smelled so good while baking in the oven, and tasted even better. I used some homemade pesto from my basil plants - - nice and garlicky. There is nothing I would change on this recipe....it's perfect.

Pecan Pie Muffins

(Previous review was not submitted under my name...sorry)I am SO glad I tried this recipe. These little mini pecan pie muffins are so scrumptious. I have a mini muffin pan that makes 20 muffins. This recipe filled 15 of them. I sprayed each one with Butter Flavored Pam - - that's it. No paper liners, no flour. Baked at 350 for 13 minutes, put down a wire cooling rack, and 14 of the 15 just popped right out when I flipped the pan over. I had absolutely no problem with them sticking or being hard to get out. (The trick is do not cook them for as long as the recipe says to.) I know I'll be making these little babies again this holiday season!

Jalapeno Popper Spread

W-O-W! This is SO yummy. I took the advice of others and used more diced jalapenos - - I drained a 7.75 oz. can and used that. The dip had heat, but no one said it was too hot for their taste buds. I also used shredded Cheddar cheese (1/2 in the cream cheese mixture and 1/2 sprinkled on top.) because that is more an ingredient in poppers than Parmesan. And because others suggested it, I also sprinkled lightly with bread crumbs for that "fried" popper taste. Baked at 400 degrees for 20 minutes and served it with Tostito Scoops. This "dip" tasted exactly like jalapeno poppers. Try this, you will not be disappointed.

Smoked Salmon & Watercress Salad With Red Onion-Caper Vinaigrette

I'm rating this on the vinaigrette more so than the salad because the salad as written is quite simple. I made the dressing a day ahead of time to let the flavors meld. It is quite pungent with the red onions, dijon mustard, capers, lemon juice, and rice wine vinegar. But those strong flavors complement the simple salad perfectly! In addition to the lettuce and smoked salmon, I threw in pinenuts, grape tomatoes cut in half, and one avocado cubed. The creamy avocado and fresh smoked salmon were fabulous together. This is truly a salad fit for a meal!

Spinach Enchiladas

If it's Saturday night, it must be a vegetarian meal! This recipe was fabulous. I used whole wheat tortillas, light sour cream, and part-skim ricotta to keep it more healthy. But the devil in me put a handful of shredded mozarella cheese on top in addition to the shredded monterary jack. Tsk Tsk. Hubby LOVED it and can't wait for leftovers tomorrow. I think this one would freeze real well too.

Eggplant Parmesan II

D-E-L-I-C-I-O-U-S!! This is the best eggplant parmesan I have ever eaten. I used 2 small eggplants, peeled, and sliced very thin. I didn't salt it as other's wrote and it was just fine. I followed a lot of the other reviewers' advice to bake the eggplant slices for 10 minutes per side and that was perfect. This was so much "healthier" because the eggplant was baked and not fried. When my husband turns to me and says "This is good enough to serve to company", I know I have a winner!!

Eggplant and Pepper Parmesan Sandwiches

What a wonderful vegetarian sandwich! I followed the recipe exactly as written and it was delicious. I slathered goat cheese flavored with garlic and basil on one side of the baguette. The olive tapenade was spread on the other piece of bread. Go heavy on these two condiments. We ate ours hot but I'm sure these would be great cold the next day. The next time I make these, I'm going to double the veggies just so I can make next-day sandwiches.

Winter Vegetable Hash

We are back to having a vegetarian meal one night a week. This was a perfect vegetarian dinner. I used butternut squash instead of the acorn squash, and added fresh garlic instead of garlic powder. Invest in one of those dicer boxes - - it only took me 5 minutes to dice the squash, mushrooms, potatoes, red pepper, shallots, and garlic. For the record, the dish needs a heavy pinch of salt and pepper for flavoring. And we splashed on hot sauce right before serving. (My husband added soy sauce too.) It just needs alittle "zing" to make it fabulous!

Blackened Salmon Fillets

What a delicious way to spice up the fish! I used Icelandic Char Fillets instead of salmon. (Also called Artic Char). It is in the salmon family but just a touch more oily (like trout). It was a pleasant change from salmon. The spices were not too spicey at all - - just enough "zing". I pan fried in a combination of olive oil and butter to reduce the smoke. 5-6 minutes per side was perfect. Don't be afraid to experiment with the spices - - anything goes!

Baked Slow Cooker Chicken

The chicken came out so moist and tender, literally falling off the bones. I used onions in the bottom of the crockpot, and threw in baby carrots and red potatoes. These were great side dishes with the chicken. I also loosened the skin on the bird and smeared butter flavored with minced garlic, paprika, lemon pepper, and salt under the skin. That probably added to the moistness of the chicken. Loved the way the whole house smelled all day while the chicken cooked -- so homey on an Autumn day!

Pumpkin Fluff Dip

A perfect recipe for this time of year. You only need to use 8 oz. of the Cool Whip, trust me! I brought this to our Neighborhood Block party and it was a hit. I served it in an orange bowl on a Halloween platter that held gingersnaps and graham cracker sticks. My husband preferred it with pretzels and that combination of the sweet dip and the salty pretzel was really, really good!

Pesto Sauce

This is the first time I ever made pesto and it was so easy. I used pine nuts instead of walnuts because that is what most pesto recipes call for. Very garlicky but we love that! I have three basil plants that are growing like weeds, so I made a big batch and froze it. I put it by heaping tablespoons into well greased mini muffin cupholders and when frozen, popped out and put in a Ziploc bag for future use this winter. It will be a nice taste of summer when it's cold and snowy outside!

Mussels Mariniere

Wow, this recipe is fantastic. Trader Joe's sells Green Mussels from New Zealand that are already cleaned then vacuumed packaged. All you have to do is cut open the package and place the mussels in a large saute pan with the broth. It's that simple - - no fuss, no muss. And don't forget about that broth...You must have crusty bread for dipping, it's that good.

Guacamole

Absolutely fantastic!! I followed this recipe to a "T" except for the cilantro - - I'm not a big fan of cilantro. I added a dash of Tabasco too to give it some zip. My husband was licking the bowl, that's how good it is.

Cheddar Bay Biscuits

I made these tonight for the first time. My Mother-In-Law from Australia is visiting the US for the first time and I thought these biscuits would be perfect for a beef tenderloin "on the barbie" accompanied with tomato/mozzarella salad. Talk about delicious, these were absolutely to die for!! Shhhhh, but she ate 4 of them with dinner!

Bruschetta Chicken Bake

I cannot believe that people said this recipe was dry and bland. We found it to be quite flavorful and very moist. This was one dish of many that I made on a weekend and popped in the freezer for a future busy work night dinner. It freezes beautifully. You could spice it up with red pepper flakes or green chiles if you desire. But we loved it just the way it was written. Excellent!
