MMMMM... Brownies

It's a rainy Saturday afternoon so I decided to bake brownies. These brownies turned out very good. Very fudgy, which is what we both love. They were easy to make and tasted delicious.

Chicken Marinade

Considering there is so much soy sauce in this marinade, it wasn't overly salty at all. We both really enjoyed this marinade. I let the chicken sit in it for 24 hours, then grilled it outside. Perfection!

Dad's Excellent Scallops

I've never had scallops wrapped in proscuitto before. Let me tell you, these were absolutely the best scallops I've ever had! I used Boarshead proscuitto, sliced paper thin. (I agree with other reviewers that you should use the best quality proscuitto available to cut down on the saltiness.) My husband grilled these on a cast iron griddle, about 5 minutes per side. Pure perfection!

Carla's Fruit Dip

Lick-The-Beaters Delicious!!! I made this fruit dip to accompany a fruit tray at a party and let me tell you, this dip is addicting. My husband was licking the beaters and oohing and aahing. I also used a full 8 oz. brick of cream cheese.

Mama's Best Broiled Tomato Sandwich

What a delicious way to use vine ripened tomatoes this time of year! I added slices of red onion to the sandwich but other than that, I followed the recipe. My husband LOVED them and so did I. This will become a regular dinner for us this Spring and Summer!

Aussie Works Burger

My husband is from Australia and made these wonderful burgers for dinner last week. OMG, they are absolutely delicious!!! The fried egg on the burger is wonderful.....all burgers should have a fried egg! Talk about a messy burger - - you won't be able to put it down, but you won't want to because of the yummy taste! Give it a try, mate!

Ultimate Twice Baked Potatoes

My friend, Linda, told me about this recipe. I rubbed the outside of the potatoes with olive oil, salt & pepper before baking. I also added garlic powder to the potato innards, bacon, scallion, cheddar cheese, sour cream, milk, and S&P. Made them the night before and I'll just reheat the filling, stuff the skins, and pop in the oven to reheat and melt the cheese. So good!!!

Chickpea Salad with Red Onion and Tomato

I also followed Diane and Linda's advice and added tuna to this salad and let me tell you, it was absolutely delicious! My husband is not a fan of chickpeas but even he enjoyed it. I also added kalamata olives and he threw some garlic pickles in his salad. This would be nice for an outdoor BBQ because it doesn't have a mayonnaise base. YUM!

Original Irish Cream

This was so easy to make and SO much cheaper than buying a bottle of Bailey's. I used a Canadian Whiskey and only put in 1-1/2 cups. It's really strong, so next time I'll reduce the whiskey some more. I used fat free half and half and it tastes delicious - - you won't miss the fat from the heavy cream. (For company, though, I'll probably use heavy cream!) Wonderful recipe!

Apple Rhubarb Crumble

This was my first time cooking and tasting rhubarb. My husband is from Australia and he said his Mum used to make apple rhubarb pie. So this recipe seemed like a good substitute. I had a hard time tasting the rhubarb, it was very much like an apple crisp or apple crumble. Very good taste! We had it warm with vanilla ice cream on top. Delicious!

Unbelievably Good Fruit Dip

"Lick the Beaters" good! OMG, this dip would make anything taste good! I used lower fat cream cheese and added a tsp. of vanilla extract to the batter, but that's it. I have 2 lbs. of HUGE strawberries all washed and ready to dip!

Slammin' Salmon

OUTSTANDING! I only had two thin Alaskan sockeye salmon filets so I cut the recipe in half. It was the perfect amount of marinade. I followed the recipe 99% (I could not find peanut oil at my grocery store so I left it out). The sauce had just the right amount of "heat" from the red pepper flakes. Baked at 450 degrees for 7-8 minutes but cannot wait to grill using this marinade. Slammin' Good Salmon!

Chicken Avocado Pizza

*****! "One of the best pizzas you have ever made." (Direct quote from my DH. And I've made my share of pizzas over the years!) I mashed the avocado, lime juice, minced garlic, and S&P in a bowl. (Left out the cilantro - not a fan at all). Everything else was just as the recipe was written. Please add the pinch of cayenne pepper - - you need the little spice. Absolutely fantastic! I've already shared it with my friends on my food forum. This recipe is worth trying, people!

Pepperoncini Beef

4.5 stars. For ease of preparation, this is 5 stars. For taste, 4 stars. I also sauted onions and mushrooms to add to the meat and provolone cheese. The house smelled great while this was cooking. Thanks for the recipe!

Lemon Chicken Tenders

These chicken tenders were good. I used panko breadcrumbs and only 1/3 cup sugar based on other reviewers' comments about the sweetness of the sauce. It was plenty sweet with just the 1/3 cup sugar. Use freshly squeezed lemon juice, not the stuff in those yellow plastic containers. It makes all the difference in the world. The combination of lemon and curry was unique.

Roasted Brussels Sprouts

My friend, Lin, told me about this recipe for roasted brussels sprouts. She said it was delicious and boy, was she ever right! These were divine! My husband was all ready to hate these as he is not a brussels sprout fan. He gobbled them right up. I had a theme going with tonight's dinner: blackened catfish and these "blackened" brussels sprouts. I roasted them at 375 degrees for 30 minutes, and I did sprinkle them with garlic powder with about 10 minutes to go. If you always thought you hated brussels sprouts, give this recipe a go....you will be surprised, trust me!

Artichoke Spinach Lasagna

We loved this recipe. With the exception of using no-boil noodles and being heavy-handed with the cheeses, I followed the recipe exactly. The smell while this was cooking was absolutely divine. The is the best vegetarian lasagna I've ever had. (And my husband is not a huge fan of ricotta cheese so to find a recipe for lasagna without ricotta is a bonus!) Outstanding!

Brie Cranberry and Chicken Pizza

What a fantastic, unique pizza! I used a Boboli as my crust, and Perdue Shortcut chicken (already cooked) so this couldn't have been an easier meal to prepare. Only addition to the recipe was I brushed olive oil and minced garlic to the crust before adding the remaining ingredients. A pinch of salt & pepper to the chicken and that was all that was needed. I'd imagine you could be quite creative with this, adding sliced red onion, a sprinkle of orange peel. Hubby said it's company worthy - - you know it's a keeper when those words are spoken. Barbecue Beef Cups

This was so simple, but pretty darn good. My husband said it reminded him somewhat of a meat pie from Australia. I added minced garlic, chopped onion, S&P to the ground beef. Otherwise, everything else was the same in the preparation. I used the buttermilk jumbo biscuits for the "cups". This would be good with ground turkey, ground chicken, even regular chicken.

Orange Chocolate Muffins

These orange chocolate muffins were good. But I had a very hard time tasting the chocolate in them, and I grated more than the 1 oz. that the recipe called for. I just had one fresh out of the oven and even the orange flavor wasn't very strong. But the concept of orange/chocolate was quite unique.
