Chicken with Mushrooms, Prosciutto, and Cream Sauce

WOW, this recipe is AMAZING! This is absolutely company worthy, trust me. I didn't salt the chicken since the proscuitto is salty to begin with and I did add a pinch of garlic powder to the cream sauce. Otherwise, I wouldn't change a thing! Tiffuhny, outstanding recipe! Thanks for sharing it with us.

Garlic Brussels Sprouts

All I can say is "WOW"! These brussels sprouts were out of this world. My husband actually said these were better than the chicken I made tonight. And that is a huge compliment coming from him! So simple to prepare, yet the taste is gourmet. Fabulous!

Prosciutto Cups

I made these as an appetizer for Thanksgiving and the whole family loved them. I took the advice of other reviewers' and added black pepper, parmesan cheese, and nutmeg to the ricotta/spinach filling. We loved how the proscuitto cups held the filling. You could be really creative in what you used to fill these cups: for example, mushrooms sauteed with balsamic vinegar and mozzarella cheese, etc. A beautiful appetizer!

Sweet, Sticky and Spicy Chicken

This was very good. A bit too salty because of the soy sauce, so next time I wouldn't salt the chicken. It could have used a bit more "heat" too so I'll go heavier with the Frank's Hot Sauce next time too. Served it over rice which soaked up the "sweet, sticky, and spicy" sauce very well!

***** OUTSTANDING!! ***** I made the recipe exactly as written and it was fab-u-lous. It was so hearty, delicious, and easy to make. We have plenty of leftovers for the 2 of us but who cares when the pasta tastes this good!

Chicken Pesto Paninis

We bought a panni grill / griddle last night so this was the first panini sandwich we made. And wow, we were quite pleased. I used a sturdy country white bread that I cut into thick slices. Then I followed the rest of the recipe exactly as written. Hubby put a hot mango chutney on his 2nd sandwich to give it some 'oomph. I love that you won't need butter or oil on the bread with the panini grill. Excellent.

Broccoli-Stuffed Sole

This was so easy to make and very tasty. I used catfish since that is what I had in the freezer. Otherwise, I followed the recipe to a "T". I had trouble keeping the rice mixture in the fish when I rolled it. So I just took what fell out or was extra and placed it around the fish in the baking dish. It made for a nice side dish with the fish!

Roast Beef Horseradish Roll-Ups

I never knew my husband liked wrap sandwiches until I made this tonight. I scaled back the measurements because I was only making 3 wraps for dinner. I used 12 inch whole wheat tortillas. And I added sliced tomato to the layering of cream cheese, horseradish, Dijon mustard, spinach, roast beef, provolone cheese, etc. But that's all the changes I made. Next time, I might add sliced onion just for some ZIP. But this was a simple, tasty dinner. I can see many variations of wrap sandwiches in nights to come for dinner!

Delicious Feta-Crusted Salmon

*****COMPANY WORTHY***** This recipe is absolutely divine! I cut the recipe in half only because I had 2 fillets of salmon. The creamy feta topping was so rich and decadent on the salmon. And the panko breadcrumbs added just the right amount of crunch. You do have to cut back on the cooking time, though. 400 degrees for 25 minutes was PERFECT!

Shepherd's Pie VI

This was my first time making Shepherd's Pie - - what have I been waiting for? It was fantastic, especially on a chilly night. I used this recipe as a guideline and make a few tweaks. I had leftover mashed potatoes from a mashed potato casserole the other night so that part was easy. I added peas and diced tomatoes to the carrots, and added worcestershire sauce and garlic salt to the beef broth gravy. Thanks for the recipe! It's a keeper.

Apple Butter Pork Loin

A perfect fall dinner! I used boneless pork chops so the cooking time was cut down to 40 minutes at 375 degrees. I "marinaded" the pork in the apple juice for most of the afternoon, baked it in the juice for 20 minutes, then topped with the apple butter and brown sugar mixture and continued cooking for the remaining 20 minutes. It was sweet, tender, moist. A simple yet tasty dinner!

Pizza Without the Red Sauce

This was very good homemade vegetarian pizza. There are quite a few strong ingredients in this pizza and to be honest, I think some of the flavors got a bit lost. I used jarred sun dried tomatoes that I drained well before chopping. Also used the last of my fresh basil and oregano from the garden - - I liked the flavor of the fresh vs. the dried herbs.

Roast Pork with Maple and Mustard Glaze

YUM! While I was whisking together the maple and mustard glaze, I wasn't quite sure that all the ingredients and flavors would taste well together. I did the 'ole "finger dip" taste test and the glaze was very delicious. I marinaded several boneless pork chops in the glaze for about 8 hours, then baked at 375 degrees for 35-40 minutes. The pork chops were moist, tender, sweet, and absolutely scrumptious! Great recipe!

Chicken Salsa Verde

This was my first time cooking with salsa verde and it was quite nice! Instead of potatoes, I used chili beans - - we're trying to be more healthy. I mixed the chicken, salsa verde, chili beans, onion, sour cream and a splash of Tabasco together. Crush some tortilla chips and lay 1/2 down in the bottom of a 9X13 pan, topping with chicken mixture and then a handful of Mexican cheese, layering until you finish with the crushed tortillas. Quite filling and a mild salsa taste. This recipe is very versatile - - you can change to suit your personal tastes quite easily.

Omelet in a Mug

WOW! This was fantastic! How can you not like a recipe that is delicious, fast, easy, and doesn't dirty a bunch of dishes. I microwaved 2 mugs for 1-1/2 minutes and it was still too runny. I just stirred it again, and popped back in the microwave for another minute. PERFECTION! You could clean out your fridge with ingredients to add to the eggs: spinach, tomato, mushrooms, bacon, ham, sausage, scallions...you name it. This is a wonderful recipe!

Remoulade Sauce a la New Orleans

This recipe is AWESOME! Made it the night before to let all the ingredients' flavors meld. It wasn't hard to put together at all. Served it on grilled salmon and bay scallops. My husband could not stop raving about the remoulade. This will be made over and over and over, that's for sure!

Chicken Cashew Salad

My husband and I found this cashew chicken pasta salad to be a little on the bland side. I added lots of freshly chopped basil and chives from my herb garden, some sliced kalamata olives, and a heavy hand with the Salt & pepper. I still needed to add some white worcestershire sauce for some zing.

Excellent salad, especially when the tomatoes are super ripe! Loved the dressing for this salad, too. I followed my good friend, Linda McLean's, suggestion and added fresh basil to the dish too. Great idea!

Baked Omelet

WOW! Delicious recipe for breakfast, lunch, brunch, or dinner. So easy to make, and a great way to use whatever might be left in your fridge or pantry. I added green peppers, mushrooms, tomato, minced garlic, and fresh herbs along with the ham and cheese. I bet the leftovers tomorrow will be even better. Great dish for company too.

Summer Vegetable Ratatouille

What a heart-healthy recipe! I peeled the eggplant to remove some of the bitterness. You can use less olive oil than this recipe calls for and cook for less time too so the veggies do not get mushy. Season well with fresh thyme, chives, oregano, basil....whatever your herb garden has. Otherwise it might come across a bit bland. I put some crumbled goat cheese in the center of a whole wheat tortilla wrap and topped with the ratatouille. It made a great summer vegetable wrap sandwich!
