Jambalaya Salad

Reviewed: Jan. 9, 2007
No canned shrimp used in my dinner! I used fresh small shrimp and went with all the suggestions and used kielbasa instead of ham. You must add some creole spice to make it a true "jambalaya." Fabulous the next day, as everyone else mentioned! It's so helpful to have all the reviewers' suggestions, isn't it?

German Chicken

For ease of preparation, this recipe warrants 5 stars. For taste, 3.5 stars. A very simple recipe with home-cooking taste. But please keep in mind that this is a three ingredient recipe ready in 30 minutes. Even Rachael Raye would be impressed!!!

Sago Plum Pudding I

Reviewed: Jan. 2, 2007
This recipe is very similar to a Steamed Sago Pudding recipe my Australian mother-in-law gave me on my last trip to Australia. It is a classic Christmas dessert "Down Under". I had to use tapioca instead of sago since you cannot find sago in an average US grocery store. After the tapioca soaks overnight, cook it over low heat in a saucepan until soft and clear - otherwise your tapioca in the finished pudding will be crunchy. Serve it topped with a warm custard sauce. Can be made 3 days ahead and freezes well.

Marinated Cheese

Reviewed: Dec. 27, 2006
OUTSTANDING! My sister-in-law made this as a Christmas appetizer and it was devoured in no time. The flavor of the marinade is absolutely divine. And the color from the pimento was so festive for the holidays. This recipe is going in my Appetizer File immediately! Oh, I just thought some people would like to know: She started marinating hers around 7 a.m. Christmas morning, and it was delicious by 2 p.m. (in case you forget the night before!)

Bacon and Date Appetizer

Reviewed: Dec. 25, 2006
With all the decent reviews, I thought this was the perfect appetizer to bring as a Christmas appetizer. Boy, was I wrong. These were not enjoyed by my friends and family at all. Everyone tried them, and they all had the same expression on their faces while chewing, like "What is in this?". I guess they are not fans of sweet/salty dishes.

Autumn Spice Ham Steak

Reviewed: Dec. 22, 2006
I guess we were expecting more from this recipe. We just didn't taste the maple syrup all that much in the ham, and it was browning and simmering in it for quite a while. We had to go to the refrigerator and get some horseradish mustard to add some "oomph" to the ham. Not a bad recipe, just average.

Chicken Tetrazzini IV

Reviewed: Dec. 14, 2006
Comfort food, total comfort food! Absolutely delicious. I used the Perdue Chicken Short-cuts from Costco to save time in the recipe preparation. The only addition to the ingredients listed was some freshly grated nutmeg in the cream sauce. (A Microplaner is the greatest kitchen tool ever invented!) Sherry, heavy cream, parmesan cheese....oh my. What is not to like with these ingredients???

Roasted Vegetables

Reviewed: Dec. 11, 2006
It is the perfect time of year for roasted winter vegetables! To entertain two of our friends, my husband grilled a leg of lamb while I prepared a salad and these vegetables. The nice thing with this side dish is it includes both the veggies and the starch. Next time, I will add more balsamic, because it is one of our favorite flavors. It only took my vegetables about 30 minutes at 475 degrees - - because I cut them all about 1 inch in size. Make sure you stir every 10 minutes because they will stick otherwise. Our guests were eating these straight out of the roasting pan while we carved the lamb!!

Boilermaker Tailgate Chili

Reviewed: Dec. 9, 2006
Hooray - I just discovered what I'll be serving at our New Year's Eve Party!!! This chili recipe is absolutely the best I have ever eaten. The italian sausage is so unique and flavorful. I doubled the recipe so some could be frozen (if I'm going to go to all the trouble of browning the meat, chopping the veggies, etc., it made sense to make extra!) My darling husband had two HUGE bowls and I just peeked in the family room to see he is sound asleep -- from a full and happy tummy. Serve with crushed tortilla chips, shredded cheddar cheese and a dollop of sour cream. Thank you, Mighty Purdue! You must be the most popular tailgate party in the parking lot!

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Dec. 8, 2006
It's below freezing outside, it must be time for some home-style baking!!! What a fantastic cookie bar. I just tried one warm out of the oven. And I can't wait to try one tomorrow for breakfast with a piping hot cup of coffee! Such a versatile cookie bar, good both morning and evening! I used raspberry jelly with seeds and it was just fine. Don't stress out over the flavor or style of jelly. Go with what you have or your instinct....it will be delicious!!

Italian Meatball Sandwich Casserole

Reviewed: Dec. 7, 2006
With some tweaks, this was pretty darn good. I couldn't imagine mayonnaise combined with the other Italian ingredients, so I used ricotta cheese in place of the mayo. I made sure the bread was day-old and crusty so it would not get soggy. Even the next day, the bread was fine. And I didn't use any water with the spaghetti sauce, just sauce and garlic. This was a hearty, stick-to-your-ribs type casserole - perfect for cold winter nights.

Seafood Lasagna II

Reviewed: Dec. 4, 2006
OUTSTANDING! This is a recipe I would serve to company, no questions asked. So rich, so creamy, so cheesy. Not inexpensive to make but again, this is a special occasion meal. I used the no-boil (oven-ready) lasagna noodles, and it turned out fantastic. Make sure you put a baking sheet or foil under your 9X13 pan - - the sauce does bubble over quite a bit! Absolutely fabulous recipe!

Pumpkin Crunch Cake

Reviewed: Nov. 23, 2006
Considering I'm not much of a baker, this was very well received at Thanksgiving dinner! So easy to make, too. Next time, I would not use the entire box of yellow cake mix (maybe 3/4rds). Mine only took 60 minutes in the oven - - any longer and make sure that your pecans do not burn. What a nice change from the same old pumpkin pie.

Baby BLT

Reviewed: Nov. 23, 2006
These babies were a hit as my appetizer for Thanksgiving. I made them a day ahead and next time I wouldn't stuff them until the day I was serving. (The tomatoes got a bit "mushy" doing them too early.) I also used 1/2 mayo and 1/2 cream cheese per all the other reviewer's. And if you cut the bottoms out of the tomatoes, they will sit quite nicely on a platter without rolling. I was asked by three relatives for the recipes so you know this one is a keeper!

Baked Spaghetti I

Reviewed: Nov. 8, 2006
Cream of mushroom soup in Baked Spaghetti? I don't think so. Followed the recipe with the exception of the mushroom soup. I used 1/4 c. mayo, 1/4 c. sour cream instead and mixed them in with the sauce, ground beef, parmesan cheese, green peppers, and onions, bringing everything to a simmer. It made for a very creamy sauce. Layered spaghetti, sauce, cheddar cheese, repeat. Make sure you top with shredded cheddar cheese so it gets nice and brown after baking. We are looking forward to the leftovers tonight!

Oreo™ Cookie Bark

Reviewed: Oct. 6, 2006
I don't normally like to bake, but this yummy recipe requires no baking at all! Crumble the cookies, melt the Ghiradelli white chocolate bars in the microwave, combine and mix. I also sifted the crumbled cookies to get rid of some of the crumbs, but my white chocolate still came out with specks of Oreo crumbs - - it's inevitable, people! Trust me, it was still delicious. So easy. Even non dessert people can make this recipe.

Well, here is another 5 star rating! My husband said this is better than anything he has received in a restaurant - - Huge Compliment. I added shredded carrots to mine and used a bit more broccoli and cheese. Serve this with a hunk of crusty bread and it makes quite a filling meal!

Goat Cheese Pizzas

Reviewed: Oct. 3, 2006
I may never go back to mozzarella cheese again on my homemade pizza! Costco sells the most fabulous rosemary-encrusted goat cheese that is actually hard enough to be sliced with a cheese slicer. Some fresh basil, fresh tomatoes, garlic, and the rosemary-goat cheese and viola! The most delicious pizza you have ever had! Who would have thought goat cheese on a pizza? Great recipe, SmithClan!

Quick Chicken Divan

Reviewed: Sep. 8, 2006
A pretty good "home cooking" recipe...well, with some modifications because so many reviewers said it was a touch bland. I used one can of cream of broccoli soup in place of the cream of mushroom soup, used 1/4 cup mayo and 1/4 cup sour cream, added lots of minced garlic and curry powder, and topped with bread crumbs. Served this over herb mashed potatoes for a simply devine home cooking casserole. I love when my husband goes back for seconds, and he did with this recipe.
