Lemon Cream Cupcakes

The best part of this cupcake is definitely the icing. It's VERY sweet and loaded with lemon flavor. It's a thin icing as opposed to a frosting. This recipe made 24 cupcakes for me. Next time I would check them at about 22-23 minutes. Great recipe!

Southwest Chicken

This was so easy to make and tasty. I added some spices to my chicken (which I cut up into bite-size peieces) based on other reviewers' suggestions: onion powder, garlic powder, chili powder, and cumin. I served this over crushed tortilla chips and topped with low-fat Mexican cheese and light sour cream. (I skipped the chips.) This would be good in a tortilla, too.

Lime Fish Tacos

This was my first fish taco and let me tell you, it was pretty darn tasty! At first, I was afraid the lime was going to be too overpowering, but after 1 or 2 bites, I was loving it. I used Sirrachi Sauce for the hot stuff and it gave the sauce the perfect "bite". To save calories, I sauteed onions and garlic in olive oil and lime juice, and chopped up some fresh spinach instead of lettuce. Delicious!

Orange Roughy with Sherry and Herb Sauce

Such an easy-to-prepare meal that tastes fancy. We loved the sherry and herb sauce. It was subtle yet flavorful. I baked at 350 degrees for 30 minutes and it was perfect. The sauce would be great over chicken or pork, too.

Szechwan Shrimp

This was ridiculously easy to make and yet it tasted like you spent a long time on the dish. I tripled the sauce based on other reviewers' suggestions and I'm glad I did. You can make the sauce ahead of time, then just throw everything into a skillet for a few minutes. Super simple. I added a few more red pepper flakes for extra oomph. It was the perfect amount of "heat". Served it with asian veggies to make it a super healthy meal.

Chicken and Corn Chili

This was the perfect meal for a rainy, dreary night. The smell in the house while this was cooking away was so yummy! I added a can of green chili's and used chili beans instead of pinto beans. I also added about 1/2 cup of chicken stock based on other reviewers' suggestions. Served with crushed tortilla chips, sour cream, and shredded cheddar cheese. It could have used a bit more "spice" so I'll use HOT salsa next time instead of medium. Very hearty, very delicious.

Portobello Penne Pasta Casserole

This recipe is absolutely incredible! I had 14 oz. of whole wheat penne pasta instead of 8 oz. so I upped the sauce ingredients to match the amount of pasta. I am also a member of the Cooking Forum that Linda McLean mentioned so I took some of my friends' advice and used extra garlic, added black pepper to the sauce and parmesan cheese to the mozzarella cheese in the sauce. So far, around 5 people from our forum have made this as our September Community Cook-Along recipe and it has been getting 5+ stars from everyone.

Braised Balsamic Chicken

SUPERB!!!! This dish was absolutely delicious. The only change I made to the recipe was adding mushrooms to the sauce. And, wow, that sauce is to die for. The balsamic vinegar and diced tomatoes got nice and thick and syrupy after simmering for 15 minutes. Served this over rice, but pasta would be excellent too. Fantastic recipe, Moonandback!

Herbed Cottage Cheese

I loved this! I used fresh chives from my herb garden, and all the other spices that were listed in the recipe. At the last minute, I squirted a few drops of Sriracha Sauce for some heat. Delicious!

Thai Spiced Barbecue Shrimp

WOW! We loved this shrimp! The spice from the curry paste was just right for us. My husband cooked this on a screaming hot griddle on the grill so some of the marinade got alittle carmelized. Delicious.

Cedar Planked Salmon

This has to be one of the best salmon dishes I've ever cooked. I let the salmon marinate for about 4 hours, but the marinade was not overpowering at all. The combination of the smokiness from the cedar plank and the saltiness of the marinade made for a wonderful taste. I highly recommend this recipe!

Baked Orange Roughy with Veggies

This was very good! I took the advice from several reviewers and added garlic and fresh herbs to the veggies and replaced the orange juice with the juice from one lemon. I loved the diversity of this recipe and all the different veggies you could use. (I added eggplant and yellow squash.) It tasted like a ratatouille on top of the fish. I only baked it for 22 minutes and it could have used about 5 minutes more. Yum!

Jager Bomb

Man, this drink is "Da Bomb". So sweet, so delicious. Like Lovestohost, I also make this as a drink instead of a shot. One 8.4 oz. can of sugarfree red bull to 1 oz. shot of Jagermeister over lots of ice. Great on a hot summer night!

Pineapple Upside-down Cake Martinis

OH LA LA! This martini is super yummy!!! I followed other reviewers' suggestions and added 1/4 cup amaretto to the other ingredients. These have a strong flavor of pineapple and vanilla. Excellent drink! (Even hubby took a sip and liked it.) Thank you, Boilermish!

Halibut with Rice Wine

***THIS IS DELICIOUS*** We loved this recipe, especially the sauce. I didn't have black bean sauce so I used oyster sauce. I served the halibut over raw spinach with cherry tomatoes and the sauce over that was fabulous too. Next time, I'll double the sauce since I could see it going with so many other things, like chicken, shrimp, scallops, pork, you name it. This would be a great sauce for spring rolls too. EXCELLENT RECIPES!!

BBQ Bacon Ranch Dip

I made this for an informal get-together with friends and neighbors. Even letting it sit out for an hour or so before guests arrived, the cream cheese was WAY too hard for scooping with tortilla scoops or crackers. Next time, I'm going to use one brick of cream cheese and one cup of sour cream to make it more dippable. Everyone liked the combination of flavors, so I can't wait to taste it when you can get more dip on your chip. ***THANKS IrishGina74 for your suggestion below. I'll try that for sure!!***

Farmer's Market Vegetarian Quesadillas

*** WORTHY OF TEN STARS ** These quesadillas were fantastic!! I also followed Nugget's suggestion of filling 1/2 of a large tortilla, folding over, and baking in the oven at 425 degrees for about 8-10 minutes or until brown. I also added some garlic powder and onion powder to the veggies while they were cooking. You can top the quesadillas with sour cream, salsa, and sliced avocado too. So healthy, so delicious! Excellent recipe!

Vegetable-Stuffed Portobello Mushrooms

This recipe is so versatile in that you can switch up the ingredients to go in the "filling" to satisfy your desires! I was going for super healthy so I used one tomato, marinated artichoke hearts, roast red peppers, spring mix, and eggplant spread, all chopped and mixed. Then I used one tsp. parm cheese on each mushroom. I drizzled the mushrooms with white balsamic vinegar, S&P. Such a pretty presentation, and super healthy too. Great recipe, Elise!

Fresh Spring Rolls With Thai Dipping Sauce

This was my first time making spring rolls and trust me, it will NOT be my last! These were so scrumptious, healthy, and fun to make. I skipped the cilantro and added fresh basil and chives from my garden. My rolling technique using the rice paper wrappers needs some practice, but that's OK. I served these with a sweet & sour sauce and a peanut sauce. I can't wait to make these using chicken too. Excellent recipe, Molle888!

'Who Needs Lettuce?' Salad

I love serving this as a side dish in the summer when the New Jersey tomatoes are in season. I always toss in some fresh basil from my garden and use balsamic vinegar in place of the red wine vinegar. So simple, yet so delicious!
