I am the mother of 3 little girls; Isabel - 4.5 yrs, Alaina - 3 yr. and Alice - 2 mos I am lucky to be able to work VERY part-time from home as a freelance graphic designer.
My favorite things to cook
I love to cook anything, especially with CHEESE. My daughters love to help, esp if they can snitch and lick the beaters.
My favorite family cooking traditions
Growing up, I always helped my mom cook - from Hamburger Helper, to the full Sunday meal. Good times!
My cooking triumphs
I think that any meal edible is a triumph. Oh, and it helps when it tastes great too!

Easy Chicken Taquitos
YUM! In addition to the canned chicken and cheese, I added a can of diced green chiles and some taco seasoning. I also used flour tortillas instead of the corn. After they were rolled up, I sprayed them with Pam and then sprinkled more taco seasoning on the taquitos. The best part was that I actually made these the day before my party, then the night of the party, just popped them in the oven on low for a while and they were warmed perfectly and still nice and crisp. I served with salsa and sour cream, but they were wonderful on their own. I can't wait to make them again!

Cucumber Sandwiches III
I followed the recipe as written, except that I used a mini sliced loaf of rye bread. Everything else was perfect! They are so pretty and elegant looking on a plate.

Pickle Rolls
These were great! I have made lots of variations of the "tortilla roll up" and have done the pickle/cream cheese/beef rolls, so this was a nice blend, and easier to make. I did some with ham and some with turkey. I added a bit of ranch dressing mix to the cream cheese. Perfect!
