Vegetarian Tortilla Stew
This is a VERY VERY good soup! Now, I kind of messed up the vegetarian part of it by adding a couple of diced up chicken breasts. I cooked that first in the pot and then added everything else as directed. I used black beans instead pinto since that's what I had on hand and when it was all done I added a little diced up avocado and a bit of fresh lime juice...YUMMY!! I'll definately do this again and double the recipe next time!

Soft Christmas Cookies
I made these with my daughter yesterday for Halloween and the recipe worked great! I liked that all the ingredients were things I already had on hand. I used butter instead of margarine and ended up letting it chill overnight because I didn't have time to do the cookies the night before, but it worked out great. The dough does get soft fast so sticking it back in the fridge between rolling some out will keep it firm enough to cut out shapes. My oven runs a little hotter than it should so I had to lower the temp a little, but I just kept a close eye on them. If they are taken out of the oven when they barely start to brown on the bottom and edges they stay soft for several days. I don't see how you can go wrong with this recipe, its great!

New England Clam Chowder I
I've made this recipe twice now and my family likes it a lot. It is a little thin, so next time I think I might just add a little cornstarch to it, but the taste is great and it's really easy. It's great served with sourdough bread to dip in the soup!
